Many thing wrong here - It's pronounced pah/EHL/yah (all phonetically) - Use Senia not Bomba rice - NEVER put meat and seafood together (it would no longer be paella)

The Iberian breed is really tasty. The fat content is high and very developed in flavour. Here in Spain we like to keep our ingredients as simple as possible, specially when you're working with such a luxurious piece of meat. Of course we use spices and herbs in recipes, but for us, the best way to make an ingredient shine is to keep it as pure as possible. Some cultures find our cuisine too simple, fair enough, but our ingredients are so high in quality that flavour is there always.

If you are having to mask poor quality with 'flavours' you have a problem. The Spanish have the best pork I have ever eaten and know how to make the best of it. Pata Negra is the best there is. It would actually be an insult to add 'flavours'
