Tzatziki is beautiful! You should give it a try if you have the chance! We used to eat it with courgette fritters when I was growing up, especially in the summer months! Very refreshing! You could also use any leftover yoghurt for meat marinades (although I'm not sure if it would work with soy yoghurt :-?) and then grill that for an easy meal. Congratulations on the release of your cookbooks! I'm excited to see them 😋😍

I made the teriyaki tofu tonight. I will try the eggs the next time. The family all enjoyed! I paired it with fried cabbage, onions, and ginger. I used extra firm tofu and did not freeze it. I had never made teriyaki tofu prior, not had I ever fried tofu. It was so easy! Thank you for letting us see into your home. I loved watching the boys try to smash the eggs, too. Domo arigato gozaimasu!

This tofu secret just changed my life. I always struggle with draining and squeezing tofu and it never cooks right. I am definitely trying this.

Tzaziki is amazinggg!! My family is a fan of lots of garlic in it and small cucumber sticks. It’s really good for BBQs as a sauce for meat and vegetables alike. I also make it when I eat fries bc I love dipping my fries in it!

Hi Miwa! I’ve been following you for many months- a year maybe? I love your recipes. I would love a Japanese recipe for a mushroom medley cream pasta. Do you have one or are you interested in this recipe? I know how to make an Italian cream pasta with wild mushrooms (fettuccine Alfredo with chicken and shiitake mushrooms) but I would like to know how to make a healthy Japanese recipe for cream pasta with various dried mushrooms and I don’t know where to start. haha! Really?! tofu is a big part of Japanese food culture, so we have variety of them^^ I promise this recipe will work with any type of tofu except for silken tofu^^

Never thought about making tofu nanban :) If you want to change up the tartar egg sauce you can substitute the onions with rakkyo or other tsukemono (shibazuke is also a good option). Usually I leave a portion without onions for my daughter since she still doesn't eat raw onions. Sometimes I make chicken nanban en custom it to her taste that way. But I think we eat more nanban zuke dishes It;s easier to make a little ahead of time :) I recently found a good vegan option that uses kiri mochi (though you need to eat that right away otherwise the mochi becomes hard).

Traditionally, tzatziki (zat-ziki, so you said it right!) is quite lemony and garlicky, and it is made with cucumber and dill weed. I would also be very interested to know if these flavors would pair well with your teriyaki tofu. I would have never thought to try it!

They key is lower the heat ( even off the heat) before you pore the teriyaki sauce^^ I hope this makes a different^^

I would not use pot that scratched. it is toxic. In general it is best to avoid any kind of non stick pan. FYI.

you can use any sweetener you prefer. Mirin which is a sweetened rice wine can be a substitute too. Some brand does contain the sugar to resemble the taste, so please check the label^^
