As a fisher AND a cook, I've learned SOO much about how to angle my knife and make my cuts from these videos. Granted, a 30 lb blue catfish is a far cry from a 100 lb Opah, but it still translates well to getting it all in the pan, with minimal bones and wastage!
I could sit here and watch this all day. Thanks for taking your time to make these videos for us. I've noticed everyone who handles the fish and prepared the meals have badly sore looking hands. That shows you they work hard and take pride in their skill. My advice to them, this is something to help soothe your hard working hands. Let them dry out well after work. Before bed apply a liberal amount of hydrocortisone cream all over both hands. Then place them inside some tight fitting but breathable gloves. In a short time you will notice a huge difference. I know it's a long shot anyone of them will read this, but just In case. Bless you all!
My grandmother used to apply some natural aloe vera gel to our wounds. It works like magic. It allows skin to heal quickly and naturally with minimal scarring!
@McFlickers There's nothing messed about it. Meat is meat. Just because you deem it "unique" doesn't mean nobody should eat it. It's not even unique at all. If it's not endangered then let people eat what they want.
A highly-skilled fish preparer who uses the right tools(VERY sharp knives) and knows how and where to cut! I bet there will be no waste, too. Okinawans are dependent on seafood as it is an island. I was there in the early-1950s (Naha and Kadena, with the US Air Force). This particular species of fish has so much bone to meat! Reqires intimate knowledge of the fish to get the best from it. i'm ready for dinner!
I dont know why people keep complining how they eat anything from the sea. Its Japan,a sea island, why cant they eat fish when the entire country is surrounded by ocean? Japan eats fish more than they eat meat It's just thier culture bruh
Been to japan many times and love it specially because of its sea food and it’s wonderful and varied what’s better than a nice sea weed salad in summer
its funny with some comments that state the fish was too pretty to die. Its like what only ugly fish can be eaten? Then you will have comments that say the fish is too gross to eat..lol wow these fish are HUGE. Makes me rethink my aquarium fish.. wowzer. love watching these straight to the core videos... it is educational. for real. great job.
pushka1540 Same here! I wanted an aquarium, now I have to look up all my planned fish for their final size. :D About the vid: finally something that shows even the gross parts of preparing a food from start to finish. (Yep, those bloody scenes. °-°)
Aryan raw food, especially fish isnt bad for u and it actually tastes nice, soft and sweet! especially with coconut cream and some flavourful veges like onion and spring onion
That was a beautiful fish! The fileting was done so expertly and delicately at the same time. The opah's pink meat reminds me of salmon. I wouldn't mind trying the filets, my ex-sister-in-law would always tell her child, "We try food items/dishes once and then we can decide if we like them or not and leave them off our list of foods never to eat again."
Do you guys ever wonder what we're trying to quench by watching these videos. Like, I don't even like fish but watching these is just...I don't even know
Que oescado mas hermoso....lo cocinaria espectacular....soy chef chileno y nuestras costas nos entregan generosos productos marinos al igual que Japón....un saludo desde valparaiso chile...
That knife was so sharp, it was slicing through the fish like butter. But forget the knife for a second; that chef was whoa! Now we all know why yakuzas use sashimi knives, lol.
@@UmarMunir94 They were always nice to me. If you have small children, they will take your children aside in most small stores and entertain them while you shop.
Yrs i also but im comfused bcs they fill the aquarium with shit. I mean thats a big fish and he wants to eat much and to go to toilet=aquarium loaded with dung
The way the fishmonger cuts the pieces is just neat. He knows really well how to extract the perfect cuts. Anyway, this is not a Pez Sol (Sun Fish), but Pez Rey (KingFish), Lampris guttatus.
if this is 'street' food it puts the rest of the world to shame.. the filleting was amazing, the chef seemed like he was a pro and the cooking technique was sublime. Everything was cooked perfectly and seasoned well. i wish i was there! i really want to know what fruit that was at 20:00.
This is a red sunfish. Although it has the name "sunfish," it is a fish similar to the loggerhead. It is the only thermostatic fish of its kind and tastes similar to tuna. I'm Japanese and sorry if it doesn't translate well.
The belly meat is the best. I never had Opah when I lived 3 years on Okinawa but since I've moved to Hawaii, I have had it several times. Haven't seen it in the fish market lately though..
yeah, all witih seasons and sauces that come from plants, which you taste. never the fish itself, because the fish has no taste. and it's greedyness like that that is destroying the oceans, and the people who pay for ocean destruction have their place with disease.
One of my favorite fish. It has quite literally one of the strangest bone structures and fillets I've ever seen. There are 5 different muscle groups on each side.
might be hard for some to watch but this guys butchery skills are impressive. He def understands that this fish gave its life for us and treats it with as much respect as one can do while cutting it up.
This is the most respectful way to do it, but people still come and hate on these videos acting completely blind to what happens in western butcher shops/factories
La Délicatesse dans Le Geste;La Perfection De La Découpe;Chaque Couteau 🔪 à Sa Fonction dans L’Art de La Présentation Suprême du Poisson 🐟 1 Très Grand Chef 👨🏻🍳 Passionnant à Voir J’ai apprécié à Voir me Reste plus qu’à Tester Cer excellent
Totally agree. Such skill and artistry. Respect given to th fish and I'm sure those who enjoyed it showed equal respect to the fish and artist who prepared itl
