In this video, I want to show you how to make Japanese Teriyaki Chicken Wings with an easy two-step process involving braising the wings with a handful of ingredients and then baking them at a high temperature to brown them. The result is these gloriously glossy teriyaki wings that are tender and flavorful to the bone. Most of the work can be done in advance, making it perfect for game days and get-togethers.

Great method! This also solves the problem I have getting the proper internal temperature on the wings before the skin starts to burn. I bet it would work great on a grill, too; not so much fat to drip on the coals.
@NoRecipes
@NoRecipes 2 года назад
Thanks Kathy! As long as the grill isn't too hot it should work, but because of the sugar content in the teriyaki sauce you'll need to be careful as it will burn easily.

I hate not being able to buy alcohol yet. These look so good!!
@NoRecipes
@NoRecipes 2 года назад
Hi Mari, that's a tough conundrum. The alcohol in the sake burns off so that shouldn't be a problem, but I guess if you can't buy it you wouldn't be able to use it. I've often wondered why sake companies don't make sake with the alcohol removed for cooking. You should be able to get "cooking sake" without getting carded, but the problem is that it includes a large amount of salt to make it undrinkable. This will also make the dish way too salty.

Can I save the sauce that was boiled by putting it in the fridge and using it for other applications?
@NoRecipes
@NoRecipes Год назад
Yes absolutely. It will gel in the fridge due to the collagen released by the chicken, but if you warm it up it will melt again.

@NoRecipes

Hi McSonovicski, as you pointed out, different ovens operate differently so you may need to make adjustments for your oven. I have a convection oven with the fan at the back of the oven. As long as you keep an eye on them you should be able to see them browning and take them out when they look ready.

@NoRecipes

Hi Raja, as long as it's not "cooking sake" any drinking sake should work. You can learn more about why sake is used so much in Japanese cooking here ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-C2p6MN4EVeA.html but in short, cheaper sake tends to be work better for cooking.

In the past I threw a paper kitchentowel on top of the fat teriyaki and pull it out right away, it helps remove the fat.
@NoRecipes
@NoRecipes 2 года назад
This will work if you have an even layer of fat, but with this it's more like pockets of fat, so you'll end up soaking up sauce with the oil.

@@NoRecipes yeah that's true. Thankfully in this barbaric region people are very energetic and live in a cold environment, so they can use a little fat here and there. I will keep the fat on the chicken this time 😎

Can you substitute mirin for sake?
@NoRecipes
@NoRecipes 2 года назад
Hi Lori, yes, but there are a couple things you should be aware of. Most mirin sold outside Japan is not real mirin (it's alcohol mixed with sweeteners and flavoring). If the ingredients include things like corn syrup, sugar, MSG, or salt, you're better off using sake and sugar. If you do happen to have real mirin, you can substitute it in, but it is much sweeter than sake, so you'll want to cut the amount of sugar in the recipe in half.

@@NoRecipes Thanks for your reply. It's just that sake is so expensive
@NoRecipes
@NoRecipes 2 года назад
You're welcome! I'm not sure where you live, but you don't need to use expensive sake. In fact cheaper sake usually works better for cooking because it contains more umami producing amino acids. You can what this video to learn more about this: ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-C2p6MN4EVeA.html

Any ideas what to serve with? Rice and potatoes are boring to me in this case :).
@NoRecipes
@NoRecipes 2 года назад
I usually have these with beer or sake because they're more an appetizer than a main course. These are pretty well seasoned so if you want to have them as an entree you'll want to pair it with something fairly bland, that's why rice works so well with teriyaki. Otherwise maybe some steamed broccoli or cauliflower ?
