Soak Korean glass noodles in warm water for 30 minutes. Blanch the noodles in boiling for 5 minutes. Strain the noodles and run them under tap water. Add 1 tsp sesame oil and toss well. Set aside.
Marinate 200g sliced beef with 1 tsp light soy sauce, 1 tsp mirin and 1 tsp sesame oil.
Dice 1/2 onion, julienne 1/2 carrot, 2 baby capsicums, 3 shiitake mushrooms and 4 Japanese tofu. Rinse a handful of spinach.
Heat up some oil in a wok. Add the onions and fry until fragrant. Add the carrots and capsicums and fry for another minute.
Add the mushrooms, tofu and vegetables. Stir and mix well. Season with 2 tbsp light soy sauce, 1 tbsp mirin and 1 tbsp sesame oil.
Add the beef slices and cook for 1 to 2 minutes until the beef is browned. Add the noodles and toss well. Turn off the heat and sprinkle some sesame seeds and mix well.
Serve on a plate and sprinkle more sesame seeds to garnish.
