He has one condenser mic picking up his entire performance. To get a balanced mix between his voice, and guitar, there is most likely a strong compression ratio bringing up all of the quiet sounds, and squashing the louder sounds. That is why it sounds like he is breathing exceptionally heavy between phrases.

not only that...it's also compressed as heck too. If you don't know what compressions is, it's when you apply a certain effect to a track to make the softer parts louder and bring the louder parts lower, in essence creating a more balanced, but less dynamic track. That is causing alot of this effect as well, if you pay attention, the entire track you can hear the vocals pretty much at the same volume....compression!
