Welcome to the Curry Shop: a new weekly series that explores one of the world’s most misunderstood comfort foods. From Japan to Jamaica to China to Vietnam, every culture has its own spin on a bowl of curry-and Indian-Canadian rapper Horsepowar is here to sample them all.
The first stop on Horsepowar’s quest is the Philippines. To help Horsepowar answer some of her burning curry questions, she’s teaming up with the hilarious Filipino comedian and food philosopher Jo Koy. At Maharlika in NYC, Jo drops some knowledge about Bicol Express-a spicy, coconut-based stew that bares a striking resemblance to some of the curries Horsepowar has sampled in her travels. But the feast doesn't end there: From remixed chicken and waffles, to 7-Up-cured pork tenderloin, Jo and Horsepowar also explore the cultural roots of Filipino fusion before making a final verdict on Bicol Express. Is Bicol Express truly a curry? Is curry really just a stew? Find out the answers to these existential food queries on the series premiere of the Curry Shop.

*One of. Rotten Apple, there are other curry dishes in the Philippines that's far closer to Indian style curry than Kare-Kare, which is closer to Satay style dishes.

FUN FACT: While there have always been some form of contact between the Philippines and India (e.g. - trading since ancient times), this was especially boosted when the British came with their expeditionary forces (in the brief British incursion circa 1760's) which had Indian conscripts called "Sepoys" said to be mostly coming from Madras. Some of these Sepoys deserted because the harsh treatment of their British masters and found their way to the towns of Cainta and Taytay in the province of Rizal. They settled there and intermarried with the locals (some of whom even today have distinct Indian features). This could be one of sources for the "kare kare" (or "kari-kaari" for a dish made from crushed peanuts and made into a ragout with ox tail, egg plant, banana heart blossom and long beans) which these soldiers longed for in their native India.

But not bicol express. Or any other dishes based on _gata_ (coconut milk) really. Just because it has coconut milk, doesn't mean it came from India. _Ginataan_ dishes are native, as evidenced by the fact that it's not even limited to savory dishes, but also desserts. There is no Indian equivalent of _binignit_ for example, a type of dessert _ginataan_ dish that was the precursor to _halo-halo._

Angry Kittens Uhhh, I'm sincerely at a loss as to the point you're trying to convey (not trying to be offensive)? Coconut milk? That's prevalent not just in SE Asia but in the Polynesian and Micronesian islands as well (e.g. - the Samoan and Hawaiian dish called "palusami" uses it).

Yes. Island Southeast Asia, Polynesia, and Micronesia. What do they all have in common? They're all Austronesian (Malayo-Polynesian) cultures, along with other islands you didn't mention: Madagascar and New Zealand. *The point I'm trying to make is that these **_ginataan_** dishes are NOT from India, but are indigenous to Philippine culture.* They are not "curries" in the sense that Indians introduced them. Austronesians have been cooking with coconut milk long before they had contact with the Indian traders. The fact that the Oceanian cousins of Filipinos, Polynesians and Micronesians, have the same cooking techniques despite them having no contact with India whatsoever is proof of that. The only common Filipino dish which can probably be linked to Indian curry is _kare-kare._ Again Bicol express is not from India and has plenty of similar precursors like _laing_ or _gising-gising,_ all of which are also indigenous. Not everything we have is from another culture.

Angry Kittens Oki then... I see now where the confusion lies. 1) The main point of my post was "kare-kare" and only that. I made no mention of "ginataan" (coconut milk-based dishes). 2) Since I was talking only about that (kare kare), I didn't get why you referenced "gata" (coco milk) since in my family/household/province (Pampanga) we never add "gata" in "kare kare". 3) Probably the most lucid area we could agree on is that "ginataan" dishes are not a form of curry-based dishes, nor should they be considered as such IMHO (curry is a far more complex mixture of herbs/spices). 4) I thought of adding that fun factoid simply because of the ethnicities of the two people in the video. Again, a touch of fun info. Ahhhh the internet. . .

yes! i liked this episode and i love jo koy but he explained it like the cultures just passed by. imparting your culture through interactions like trade is very different from imparting your culture through colonization. the thousands killed through centuries of spanish, american and japanese occupation most definitely didn't want their country's history as "a couple of countries dropping by"

They mentioned all lot of pinoy food but never the chicken curry. It's literally in every neighborhood carinderia and it's the only pinoy curry dish I know. Coconut based cuisine is more Malay style.

Never in my life I have thought that Bicol Express and Kare-Kare as "Curry". The only Filipino Curry I have known in my life is Chicken Curry. Bicol Express is a "Spicy-meat-coconut-milk stew" and Kare-kare is a "Beef-Innards-Vegetable-Peanut stew". The former achieve its spiciness using chili and the latter has a sweet taste and is eaten with fermented shrimp to add saltiness. None of the two is cooked with spices that's use in real Curry.

Actually Kare-Kare might come from the Japanese word "Kare" which means curry.

When the British introduced curry to the Japanese in 1800s, Kare-kare has been a decades-old curry-inspired dish in the Philippines having introduced by the Sepoy Indians who either migrated via the Malay Archipelago or being brought by the British when they captured Manila and parts of Luzon in the 1760s. Kare-kare is more like a satay dish than a curry.

In the Philippines, every family has its unique cuisine and recipe, you can't eat the same food in different places. The recipe is like a treasure, it is kept within the family.

Pretty good. I don't really think there is any reason to have the celebrities in it, but I'm glad Jo Koy actually had something relevant to say about the cuisine. They are also riding real hard on how cute the girl is. She seems like she's a good host, but we can skip the b-roll of her doing cute stuff.

The host is adorable. I'd like to see more of her actually trying to the food. Stop doing these weird cut scenes. She sucked the shrimp head but I never saw her tasting the broth by it's self, which is the actual curry. She hardly reviewed the food at all. I don't know if she liked it, hated it, or thought it was average. Please make the show more about the curries. I watched this to learn more about different curries not watch the host dance randomly and turn in circles.

Finally you found a good host for your non-hot ones show. This lady sounds educated and has the charismatic chops that make her a good interviewer and video presence. The burger and beer shows suffer from their lame hosts (well, at least the beer guy is likeable). Kinda sad Miss Info never got her own show, she's not bad either.

She’s got the look and the B roll and pre written parts down but her descriptiveness and details absolutely drops when it comes to the food. Respect the cuisine. Do it a service. Don’t perpetuate a myth of what’s “gross” or “weird”. As Anthony Bourdain once said. No matter what it is. You say yes and eat it. To disrespect ones food is to disrespect their culture.

Yeah I gotta agree. I came for the curry, but the only exciting part for me was the owner of the restaurant describing it. They went way too long on the prawn head, and ended it with “it was good.” Like... highlight the actual curry if that’s what this series is about. We understand that cultures have different food other than curry, but showcasing the differences in culture through curry itself was supposed to be the highlight.

Perhaps a FUN FACT: Just a note in reference to 4:24... during WW2, the presence of American soldiers on the Philippine Islands and the accompanying abundance of rationed canned luncheon meat, notably Spam, influenced Filipino culture. This partially explains the seemingly odd fusion of American elements (along with many others) present in the resultant Filipino cuisine of today.

Filipinos do have curry dishes. My mom cooked chicken curry a lot, with coconut milk.. Also a type of catfish (kanduli) with that yellow turmeric thing & hot peppers.

What we usually put to make chicken curry here in the Philippines is turmeric(dulaw or duwaw in the bisaya region of PH) powder. We add it to the coconut milk.

we eat curry, chicken curry most of the time but sometimes shrimp... othertimes pork... We put gata/coconut milk on our curry... That is what we consider Curry in Cebu... Well, what my family, relatives and friends consider as Curry... Curry Powder is used 😅... and we eat it rather often at our homes... Potatoes, Red and Sometimes Green Bell Peppers, Carrots are cooked with the meat.. (plus Basil leaves and Peppercorn... optional)

The Kapampangans were using curry. The word "carenderia" a kapampangan word derived from kare (curry). Kare-kare (is not originally peanut paste, but curry paste) replaced later with peanut and coconut milk.

She did say toward the start that she was getting into dishes like curry but not called curry. A more orthodox start would be to go to an Indian curry restaurant and build a solid foundation of what curry is. How it's made, eaten, it's history cuz this left field stuff is totally confusing and feels wrong. Otherwise good stuff, I learned a lil and enjoy the style just want substance.

Yes, Yes!!! Strong first episode. I love the soundtrack, and the premise for the show. I had no idea that the Philippines did curry, as well. Can't wait to try out some dishes. My only constructive criticism, is that Jasleen's personality is strong and vibrant enough, that she doesn't need to rock all those dancing cutaways. I mean, if that's her idea..then I can't argue with that. But if it's the producers idea, as some way to convey 'energy', I personally found it to be annoying. That said, looking forward to learning more.

Loving the new show. Absolutely cracking dishes. I am hoping you'll hop over to the UK for a special on the Birmingham "Balti Triangle" where a lot of Indian takeaway dishes were created and (personally) perfected. These are the Indian equivalent of the American - Chinese dishes. You won't find them in their supposedly native countries but you won't find more unique flavours one dishes that take the concept and blast it into next gear!

The closest approximation to Indian Curry is Filipino Muslim food. I’m reallly curious to know why this hasnt come up more and there has yet to be a Filipino cookbook starring this amazing part of our culture.

Bicol Express is named after the train system here in Bicol because they usually sold it there. It was actually invented in Manila.
