Joong is a sweet (sticky) rice dumpling with delicious fillings, wrapped together in beautiful bamboo leaves. Using a mold invented by her father-in-law, Mr. Edward Chong, Lana demonstrates step-by-step how to make the intricate folds of the Joong out of gigantic bamboo leaves. She also demonstrates the correct “stringing,” using a fabric model that is a treasured piece of art. Following these steps, will result in attractive, uniform-sized Joong. The Chinese Community Church developed this method of wrapping. Lana will also discuss the various components of the savory “fillings” that go into the rice.
