Hey @@21972012145525. It's difficult to tell if Jose blewout the flame or if Stephen actually put the fire out with the CO2 and water vapor (the fog) from the drink. Frame by frame at 4:56:75 looks like they both acted at the same time. Although it doesen't look like there was much vapor in the drink, it is important to note that CO2 is colourless and would still be above the liquid in the glass. Also the effort of Jose's breath (noted from the sound track) that it may have been Jose that extinguished the fire with his breath. Yes Alcohol could have added fuel to the fire, but no liquid left the glass. If you watch the video again, the fire is caused by cooking oil on the bottom of the pan getting a flash of oxygen as the pan is being removed. The oil is already hot (seemingly heated before the segment began) but does not leave the pan and get underneath until Jose is spilling the oil over the egg. There is quite a bit of oil that splashes over the pan and onto the cook-top. Observe that there is more smoke coming from Jose's pan than Stephens pan before they are removed. It looks like the oil that was trapped between the bottom of the pan and the cook-top was heated close to it's flash point and thinned out as the pan was being removed. The induction cook-top is made of glass (very high melting point and even higher flash point) and the cook-top itself does not get hot. What we are likely seeing is the hot oil on the underside of the pan (being heated near to it's flash point by the pan) and being sandwiched or thinned between the pan and the cook-top causing it to heat more than the remaining oil in the pan (or in Stephens pan). The act of removing the pan quickly may have caused a small amount of oil to be in vapor form and allowing a flash of oxygen (fresh air) to be introduced causing the oil to combust. It is worth noting that the oil would have caught fire on a ceramic cook-top or a gas cook-top as soon as it was spilled out of the pan. Most commercial kitchens use gas cook-tops and as a result, most chef's are familiar with the fact that the oil can splash out of the pan and cause a series of small fires. Jose is no stranger to this as he can be seen calmly making Spanish Fried Eggs in the following link without panic ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-IdeszbyfAdE.html. The fact that it was an induction cook-top allowed for much of the oil to drip onto the surface and not burn as the cook-top itself does not get hot. Also, the oil that was burning was burning like a candle (from the top). If a ceramic cook-top was used, the oil would have been heated from below causing bubbling and burning - a more uncontrollable kitchen fire. We need to be mindful when cooking, and take extra caution when cooking with oil. I think Induction cook-tops are far safer for home cooking than any other method. We have great chefs in Spain, José Andrés is a popular cooking icon here, same as Arguiñano (another excellent cook). Its a general thing in Spain, mixing cooking and comedy, most popular cooking programs in Spain have that idea and its great! ^^

We boil it in water and mix it with sugar then ice it to make agua de Jamaica. It has a very rich red color and tastes absolutely amazing.

I'll always remember the time I introduced my best friend to jamaica. He asked what it tastes like, and I told him "Imagine a cranberry punch. That's about as far from the actual taste as you can get, but it's a convenient enough lie to give you at least some idea of the true flavor." When he tried it, oh my god, all the different faces and emotions that ran across his face in quick succession! It was like the scene in Hard Day's Night when George was being photographed, only a seamless blend from one image to the next, and mostly surprise, confusion, delight, elation, and deliciousness.

I've had the biggest crush on José since watching his Made in Spain cooking show on PBS like a decade ago. He seriously made me fall in love with the language, the food, and the people of Spain. Every time I try to make a tortilla de patatas, I think of him and how much I have learned (but not about how to cook food without burning it, apparently. :P ) He has such a generous and loving spirit, like so many of the Spanish people.

I want to thank José Andrés for his tireless work to feed people in distress all over the world. I especially want to point out his work in Puerto Rico. The Puerto Rican people deserve so much more than the U.S. government is giving them. If I were younger, I would love to joing Sr. Andrés's team. He is a true world treasure. We need many more like him in this world.

José Andrés is a true hero. Every time I see him talk about how he fed Puerto Rico after the hurricane really makes me tear up (you should REALLY watch his tedtalk). He's such an inspiring human being. Being a mexican after last year's devastating earthquakes, it really gets you thinking that no matter your profession, you can ALWAYS do something for people in need.

One of the better cooking segments. Jose presents really well and also made a little of his own chaos so that Colbert didn't need to work as hard to sell the segment and could sorta just go along with it.

C J it would work. Check out Cody’sLab. He has videos where he puts out flames with carbon dioxide fog from dry ice.

C J I strongly doubt that Stephen was going to use the CO2 in that manner. I assume he was going to poor the drink on the induction plate. A note, alcohol has to be 160 proof (80%) or higher to redly burn. So the drink most likely wouldn’t have burned.
