『日本寿司リーディングアカデミー』、第一回授業『鯵のなめろう』(Chopped horse mackerel with miso)の動画です。
映像は54分と大変長いですが、この動画より懇切丁寧、分かりやすい『鯵のおろし方』の動画はないと思われます。
授業のタイトルは『鯵のなめろう』ですが、鯵をさばくところまでをご覧いただけます。
その後の「なめろう」を作っていく作業はカットされていることをご了承ください。

This is a video of the first class "Aji no Namero" (Aji Namero) at the "Japan Sushi Reading Academy".
The video is very long (54 minutes), but we do not think there is a more detailed and easy-to-understand video on "How to grate horse mackerel" than this one.
The title of the class is "AJI NO NAMERO", but you can see the process of cutting the horse mackerel.
Please note that the rest of the process of making "Namero" is cut.
