I've seen comments on Uncle Roger's video that Rinku is making a home version of biriyani which combines ingredients from several regional versions of biriyani. I don't remember where all the inspirations come from, but her ingredient choices are authentic. Uncle Roger even admits this in the comments section of this video. As for her rice being mushy, that seems to be a personal preference. The pro chef is just... yeah... And we don't talk about the level 1 guy.

It is Bengali style biriyani, Period!

The lady who used grain for nasi briyani is certainly from another extraterrestrial universe. There are "chefs" that can't cook, and then there are "chefs" that can't read. The very meaning of "nasi" in the dish name "nasi briyani" already tells you it's a rice dish. I hope she's not the type that sleeps in the toilet and poops in the bedroom.

Yeah, exactly. Biryani's literal etymology comes from the Persian word for "rice." I'm all for variation and changing up traditional recipes. And there are indeed lots of different kinds and variants of Biryani. But the spectrum of variation when it comes to traditional recipes only goes so far to the point where you can't even call it that dish anymore if you take away the quint-essential ingrediant which makes the dish in question the dish by universally held standards.

Stephen the Level 1 guy, he did his best, despite not having basic knowledge of Biryani. He made a cross between biryani and pulao. Rinku the Level 2 woman, she did kacchi biryani, a version not known in Pakistan nor India, but in Bangladesh. She used seafood, that wasn't commonly used and uniquely used in Bangladesh and in sometimes, in South Indian coasts. Danielle aka Level 3 woman, yeah, she doesn't made biryani, she made beer-ani, and doesn't use rice, but freekeh. She made the rivaling South Asian nations unite against what she did.

Level 1 - pretty close to Pulao? Level 2 - pretty close except for overcooked rice and some mishaps Level 3 - what a joke, despite being a pro chef btw no such thing as a vegetable biryani and freekeh is not a rice grain for sure, potatoes are okay in some regions (biryani is a regional rice dish)... speaking of which, Jamie Olive Oil strikes again on the recent weejio of his Gado-Gado

Like, I'll be generous to the level 1 chef guy. He's supposed to be level 1, so an attempt was made at least. Level 2 seemed to have made a good biryani nonetheless. It seemed like she mixed ingredients from different regions. Level 3 though, tried way too hard.

3 was the worst. I am not sure about rose water myself, other than that 2 looked very nice. If the rose water is that strong though, I guess I would have to go with 1. Although we are not really shown his final end product.

People think that the level 3 chef did the worse if you check the comments of the uncle Roger and eupicurious video (so much anger towards the chef labelling her dish as prison food lol) Yeah I pretty know nothing on biryani but can agree that the level 2 chef did it better. Nice video.

Wait, what??? Freeca for Biryani??? If i had to pick one to eat, with a gun pointed to my head, i'd choose 2. Never tasted rose water in my life, but i'd twke number 2 over the 1& 3

Rose water is terrible, believe me. My dad brought some bottles from the middle east and I thought I’ll puke. It’s like driving through a rose garden with your mouth open. But I’ve been to Kolkata a few times now since my fiancée is from there and in some regions they really put it in there as well. So Nr. 2 did a good job.

Rose water is essential for Kolkata biriyani. Also, kewra water.

I'm sorry but the level 1 chef annoyed me sm like how can he cook that abomination for his girl? Level 3 chef is just.. ugh. To be fair, I would actually eat Rinku's dish ✨️

Level 2, she knows the dish. How it supposed to be prepare. How it taste like and what's the best for the dish. Level 3, definitely don't know what she was doing. If not she not going to use freak-ah grain. When a person doesn't know the dish, it won't taste as good as for example the one that cooked by Level 2 chef. The level 3 already fail before the dish was presented.

The creator of "Diversity Kitchen" culturally appropriating byriani is way too much for me this early in the morning...

Well, anyone harping on about diversity, is probably a diversity hire. So they don't have to perform to get promoted, just have to be black and preferably female. Hence why she has all the confidence in the world. No-one ever tell her that she fucked up.
