In this recipe video, Justin Chapple makes cataplana, a savory one-pot feast of shellfish and smoky linguiça sausage hailing from the coastal Algarve region of Portugal. The dish takes its name from the hinged metal vessel it’s traditionally cooked in, and the broth picks up plenty of briny seafood flavor from shrimp, squid, and mussels. For the authentic taste, use linguiça if you can find it, but substitute chorizo or even kielbasa in a pinch.

I'm sorry .... linguiça and Kale?? The portuguese in me is having a stroke.... Ok ... traditionally is almost there, we use red and yellow bell peppers not green, no linguiça (No dout it imparts great flavour but we don't use in this). I'm ok with the clam juice, we usually use fish stock. NO kale. Serves with boiled potatoes. I have no douth it turned delicious in the end, but I just went "WTF" a couple of times here. Also for those that are curious a cataplana is a coper "pan", think 2 copper woks that fit together.

I have no doubt what you say is true about a true Portuguese Cataplana, but remember this is the Provincetown Cataplana. It originated with Portuguese immigrants making do with ingredients they found available in their new homeland. The same recipe, plus cubed potatoes and chopped Quahogs (humongous Cherrystones) in place of the other shellfish seen here, produces a wonderful Provincetown Clam Chowder. (I like to use Cod or Haddock in place of the clams, when I can afford it) but the clam juice must NEVER be omitted, in any of these recipes. Aprecia!

Whatever you cook in a Cataplana, is Cataplana. Without the actual vessel, it's seafood stew.

Add a little more tomato juice and it is chopino...add rise and its paella...
