I am 42 and remember watching reruns of his show as a kid. The one thing I noticed watching many of these on youtube as an adult is he cooks with precision. You may think he is a simple Cajun style cook but I see a guy as skilled as the best chefs in the world then and now.
My Mother use to say she could smell whatever he was cooking. It warms my heart and brings back beautiful memories of days gone by, when I watch his videos.
I remember watching him every Saturday on PBS when I was a little girl. Lol 😂 I remember he always had a side of white rice somewhere on stand by. That was over 36 years ago I’m 46 now. So many memories ❤️❤️❤️
that was my Saturday on pbs watching this show then norm building stuff and bob ross paint things. woke up early to listen to Justion tell the stories i am 47 today. Lived in east Tx then. now in Tn still watched the show to the end thank you for keeping the show going.
Lord I miss these days...no razzle dazzle chefs just a good down home cookin'...this elder was the best in his field...these young ones have some catching up to do
Back when we only had 4 tv channels and of course no internet. Funny how the really great shows stood the test of time. His shows ran on the public channel in N MS, Ch 10 iirc, and I loved em. I'm going to make his venison piquante tomorrow.
Great memories! My favorite cooking shows growing up were Justin Wilson and Martin Yan's Yan Can Cook. I remember when Justin said, red wine with beef and white wine with fish, NO. You drink the kind of wine that you like to drink. They both showed that cooking can be fun.
Watched him as a young child in public access tried finding him for 5 years I was 4-5 at the time so glad I found him as an adult now I will learn and cook what he has shown
I'm ashamed to say i have just found out about Mr Wilson as i am not from the USA, he really was some character with his good old fashion fun, the world needs more folk like him i think.
Man I miss my Childhood and this was most definitely a part of my Saturday...I watched as much t.v. as I could up until my friends came climbing up my steps to get me to come outside...
I used to watch Justin every Sunday on public TV. I miss those days and I Thank You so much for bringing him back in your videos !! Thanks For Sharing ! !
I had the pleasure of waiting on Mr Justin back in my waiter days, at patouts restaurant in Baton Rouge, and he Lafittes Landing in Donaldsonville Louisiana And he always joked with me. When he saw me an Lafittes Landing he recognized me and asked if I could wait on him. He asked me if i remembered what he had ordered at "the other place" where i had waited on him before, and i answered " A nice ribeye and just knock the horns off of it" lol
@@cheddar2648 Thanks for the compliment! Im actually a big History buff but in general I may have been born in the early 90's but I am not into the modern cooking shows we see today on television.
My Mom and I would watch him in NY. The laughs were on with the way he phrases and that cajun logic is sublime. Two Words...Common sense. And the food ain't bad either.
So I went to Penn State, having grown up in Jersey, back 99ish... Almost all my bros were either NJ/PA/NY guys, except one came up from outside New Orleans, LA .... ( he thought he'd avoid trouble by avoiding LSU and driving 1000mi to PSU... LOL...FAIL...anyway...) he dropped the "I gah-=ron-tea!" , with an accent, on us a few times before we were like ... WTF are you talking about ?? JUSTIN WILSON!!- What??? The famous chef!!! Who?? He couldn't believe we had no idea who he was - none of us - and we would wind up lying to him , Ohhhright uh, , that guy, .....right...yeah... the chef, did you say? Right ..... none of us, never had any idea who he was until watching these videos...at least now I know lool.
I’m so thrilled these videos are posted - my Saturday morning hang overs were overcome by watching him and being inspired to cook up some great grub in New Orleans in 1999-2000.
I used to watch this with my Dad as a young kid , he sure loved watching Justin Wilson cook . This brings back so many good memories thanks for sharing them .
I am glad you have brought Justin Wilson to You Tube. That used to be my favorite TV show. I was saddened when Public Television removed the show from their line up. Thanks
I'm gonna put this channel on auto play feeding to my flat screen and just let it run all day. I grew up with this on the ol school turn dial tv when I was knee high to my dad I garuontee!!
he was such inspiration for me growing up. I never missed seeing him. at the tender age of 8, knowing how to cook like him, such an honor. Justin & Julia, can't beat that no where. thx so much for the posting
+Sdot X We grew up dirt poor. my friends always bragged about cable. I always looked forward to see him on PBS because we still had two channels on antennae lol . I still today watch and cook his great food.
Eric Watts listen... Pbs was everything to kids back then. You got so much out of the programming. We made due with what we had. Didn't steal, earned it all. People now a days don't no the meaning of life. I appreciate you sharing

That story he told about notching the boat railing is an old Zen koan. Master Dogen wrote a capping phrase, “On the path it is rare indeed to meet with a pierced-eared travelled, much more common are those who notch the boat.” This being a reference to the original story in which a sailor drops his sword by mistake into the sea and cuts a notch in the boat rail to come back for it later.
It's good to see his show, and learn how to food this one did not grow with, got his cook and cook a few thing my deft , just wish the cooking station would bring back a few old cook show.
I was watching another video on frying up venison. One comment asked, "How much are they using?" The reply was: they are from Louisiana, they are eyeballing it. haha
