Ginger Sliced----------------------------------1/2 inch piece
Kashmiri chilli powder--------------------2 1/4 tbsp
Turmeric powder-----------------------------1/4 tsp
Asafoetida--------------------------------------1/8 tsp
Fenugreek powder--------------------------1/8 tsp
Dry chillies--------------------------------------2-3 nos
Curry leaves------------------------------------Few
Mustard dal------------------------------------1 1/2 tbsp

Try cutting the mango with the skin on if the skin is not bitter some mangoes have bitter skin something in the skin helps to prolong its shelf life & enhances its taste too.this knowledge is passed down by generations of grandmas. I always do it.

Your version of one of my favorite pickles(I have a tendency of indulging this in excess and suffering the consequences the next day)is quite a variation from the recipes I have encountered in various books.I must admit that though purists may disagree with your method,your version seems a lot more enticing and mouthwatering.Hovever can you let me know as to a rough estimate of the salt you added so that I get some idea. Also the soaking of the mango in brine- can you elaborate on that-quantity-is Half an hour sufficient-and do you drain of the water .my knowledge of the Mallu lingo has its limits. Super stuff though.My grandmom used the mustard in the end-imparts a flavor which can be addictive.

Hi, tried out your method. Superb. Adding sugar and kaduku parupu was new to me . Shops here in Tambaram do not know kaduku parupu so I bought white mustard. Not sure if that's the right ingredient.
