This dish is known as Flat-Rice Noodles Soup With Chicken And Prawn or Kai See Hor Fun in Malaysia. It's also famously known as Ipoh Sar Hor Fun. The rice noodles from Ipoh boast to be the best in Malaysia because of its silky-smooth texture. I have to concur on that score. The soups are made with chicken and fried prawn shells and are naturally sweet. It is delicious, warming and wholesome.
Flat-Rice Noodles With Chicken And Prawn Broth (Kai See Hor Fun)
Ingredients
2 lbs Prawns/Shrimps, shelled (reserved)
2 lbs (2 to 3 pieces) Chicken Fillet Breasts
2 lbs Fresh Flat- Rice Noodles (hor fun)
2 to 3 Cups Bean Sprouts
100 g Chives, washed and cut into smaller segments
6 Stalks of Scallions, chopped
3 to 4 Fresh Red Chilies, sliced
Some Light Soy Sauce
1/2 Cup Crispy Fried Shallots
Peanut Oil
Soup Base
2 to 3 (1.5kg/3 lbs) Chicken Carcasses,
18 Cups ofWater
2 Tbsp WholeWhite Peppercorns, place in a spice bag
50 g Rock Sugar, or to taste
2 tsp Sea Salt, or to taste
1 lb Shrimp/Prawn Shells

I tried your recipe and it tasted so frikking excellent! Better than what I had in PappaRich haha. Well frying the shrimp's shells and heads was another challenging part when they started to pop pop in my pan but it worth the taste for the soup! Thanks for sharing!

i tried the way she made the soup base today (didn’t have time to prepare the whole thing), it turned out VERY GOOD even without the same measurement of the ingredients ;) the rest I just boiled it casually.

If I may, carcass is actually dead animal body. I've seen this word used incorrectly a few times in the description of chicken bone and chicken breast or lean poultry in RU-vid. That aside, thank you so much for the recipe. I really miss this.

Thank you for sharing, if you wish to make Ipoh Kai See Hor Fu, we, Ipoh folk cooks like Cantonese, Chicken if boiled for so long, no one will go there to eat. We use 白剁鸡 meat to garnish to bowl of noodle. Put the blanched bean sprout in the bottom of the bowl then the blanched ho fun, then arrange the boiled prawns -- each sliced into 2 slices, a few slices of 白剁鸡. then top with some blanched chives. Then add in the soup. At home we normally will slightly crushed the fried prawns shells into the soup so all the aroma from the head of the prawns will released into the soup. At the end of simmering the soup, we drop the de-boned chicken into the soup, once boils, reduced the heat and simmer 5 mins, off the fire. After 10 -15 mins, drain out the chicken, slice when cooled.

Thanks for the tips..The chicken in this recipe was cooked for about 15 to 20 minutes, depends on the size. You can adjust the timing accordingly.
