KALE DRESSING RECIPE
2 tbsp tahini

@siwuz84 He did point out that other greens (like spinach) have oxalic acid which can be problematic. Hard to respect that you say " He never ever informed his viewers about the potential risks ..." when he did that. Maybe your strong antiveggie bias made it difficult for you to hear. That might prevent you from hearing things that could be good to know. If your nutritional beliefs fail you in the future, remember the alternatives.

@siwuz84 I agree that "vegan" does not really describe a diet, more what one DOESN'T eat. Coca cola and potato chips is vegan, but hardly healthy. I eat "whole food plant based, low SOS (salt oil sugar)" and try to include fermented stuff like sauerkraut, combucha and bread and a big portion of what I eat is cooked. Some people say that meat was what allowed us to develop our brains, but I find that the discovery that we've been cooking much longer than previously thought supports that COOKING was the big change that helped us get the nutrition/energy needed. (It could let us get MORE out of plants and also make meat, which in raw form is not very tempting for herbivores like us :-), into something we could eat) There are 10 times as many cells in (the bacteria) in our gut than in the rest of our entire body. They make many essential things that we need to be healthy (for immun system) and happy (for our hormones). They can and do use fiber. Smoothies can have many advantages, but one disadvantage is that least nourishment is left for the bacteria! I don't know if you checked ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-NMN1Zo_c7_A.html , but you haven't mentioned it. It is about a lot of different signs that we are basically herbivores. Several things in it were new for me. Please give it a look and if you find errors point them out. Otherwise embrace the herbivore sides of yourself! :-)

@siwuz84 The human body is amazingly able to adjust to so many different situations. Though I think that most people think that humans used more animal stuff than we did historically (and prehistorically), I'm thankful that humans have been able to eat meat in difficult situations, esp far from the equator, but that doesn't make it the best food (though it is better than nothing when you're starving). You continue to write "We are omnivores after all,". Have you checked the video I linked to? I hope you will. Do you see any errors in it? I have during some periods eaten raw eggs, gone back to "real butter" and haven't felt any radical changes in how I feel. I've basically been able to "eat anything" most of my life without any acute problems. I do feel that the changeover to whole plantbased food was an important part of being able to get my weight down where I wanted (From BMI 26 to around 21-22) without any calorie counting, portion control, hunger. (Though eating connected to emotional stress is a very important factor). Glad that you feeling good on what you are eating. Glad that there is the whole plant road for you to try if things change for you. The most common death type in US is heart attack. Unfortunately there are many people that feel fine and have (so called) "normal" levels of colesterol etc. but have a intense heart attack that kills them, before they can try changing their diet. "They arent good at all for my digestion" What happens?

In the UK the Italian kale is known as cavolo nero literally translated to black cabbage. The best of the bunch taste wise.. At least I think so.

Our vegan fam loves kale in Sweet Potato White Bean Soups best! Kale salads are sooo satisfying with a creamy dressing too! I'll def be trying out this recipe! Obviously, my vegan kids love kale chips too!

Worth noting: kale was #3 on this year's Environmental Working Group's "Dirty Dozen", meaning conventionally grown kale is super high in pesticides. Best to get organic

Derek, I made this recipe last night and I'm totally hooked!!! This will be a "go to" for me every week. The dressing is so addictive and I can use it on many other salads. we don't have bacteria in our stomach like herbivores do, which is needed to break down fiber. We only have bacteria our gut, like many apex predators. GG vegans

@Cthulhu This study certainly covered many people but it is not really accurate since the average person is not healthy. Certainly, a vegan diet is better than a processed food heavy diet. Fiber has benefits and it has cons, as does any non-essential nutrient. Again, we don't have the necessary bacteria to turn fiber into fat as ruminants can. Being in ketosis, however, grants the same benefits as fiber. There are no studies outright comparing a ketogenic diet to a vegan diet, unfortunately, but one can simply research both the benefits of fiber and ketosis to see the similarities. Science will always be behind because it aims to be precise and truthful so as an ex-vegan, I have no choice but to trust my own biofeedback. I've tried veganism for 2 years and now carnivore. Can you say the same?

@Cthulhu You're gonna have to find it for me because last time I checked we pass it out. Even soluble fiber isn't digestible, it only soaks up water and turns into a gel-like substance, useful for passing toxins through and out the digestive tract. That's interesting, was the meat grass-fed/no antibiotics? Did you it eat raw, lightly cooked, or well done? Diarrhea makes sense because the stomach flora always have to adjust to large dietary changes but a fever is surprising. It doesn't make sense to get a fever unless perhaps you've developed some kind of allergy to meat. A fever isn't something I can pinpoint with any certainty though, unfortunately.

Fun fact - I live in Russia and you CAN'T buy the so called Russian kale😭😭, this is my major problem - not enough greens on the market in small towns. The situation is slightly better in summer when local babushkas start growing things in their garden. Other then that - you're pretty much left with spinach, arugula and salad leaves throughout late autumn, winter and spring. I was wondering if there are any equally nutritious substitutes for kale. Anyway, Derek, thanks a lot. If I am able to get my hands on some kale seeds, I'll try planting it in my godmother's garden🌱

Alena .Zubritckaia you should try planting it! I live in the north east USA and it’s pretty cool here but kale grows very well in my back yard and it’s quite easy to care for :-)

@@jmarie6344 thanks a lot! I'll definitely try. live in a place where we have really harsh winters but very hot summers as well. It looks like Texas in summer) So things grow quite nicely. We grow apricots, cherries, strawberries, raspberries, apples, pears, blackberries, watermelons and so on and so on. We can grow a fantastic variety of plants, but they're not a staple in the local diet because people are not rich in the least and tend to choose more "filling" or cheap veggies like potatoes, carrots and cabbage. And literally nobody eats greens. I was buying arugula the other day and it cost like 1.5 american dollars. The girl at the checkout asked me if I knew for sure what it was, because most people confuse it with parsley (40 cents). We are not a green eating nation, apparently 😅

I don't know how it is in Canada, but we have pull up bars in every little neighborhood next to playgrounds. And just like you, a lot of sporty men can't walk past a pull up bar without doing a couple 😅

Spinach has relatively similar antioxydant contents to kale, for many anticancer compounds it actually systematically outperforms kale according to research shared on nutrition facts. So if you can get that and have kale in season, it's not too bad.

Kale salad is my favorite. Massage it with some salt, lemon juice, and avocado. Top with sesame seeds and chickpeas and you have an entire meal.

Absolutely my favorite salad . . . Add cherry tomatoes, onion, hemp seed, pumpkin seed and sunflower seeds. You should do a video about beans . . . Black, pinto, kidney, navy etc. Thanks for the video, very entertaining.

I usually don't strip the leaves from Lacinato kale stems since it is pretty tender. But if you do, definitely freeze the stems to add to your smoothies! It functions like ice and it is free, just like strawberry tops.

So yummy, thanks for so much info Derek! I love to freeze kale, it breaks down the toughness nicely, and keeps it from going yellow, too. I'll have to use those stalks in soup, better than tossing them in the compost. I love this new food series!!

YES! You have no idea how many stores I went to to get good tahini for this video. I found one brand I liked and the store stopped carrying it. All the stuff we get around here is so gritty and dry. What is up with that? How is it that the Middle East are the only ones who know how to grind sesame seeds properly?

Have you tried growing & using Wild Garlic? That's a super-tasting weed local to me, grows in shady, damp locations and spreads well. I pick leaves from early April through June and use them cooked or raw. The seeds are edible and can be mixed in/rolled onto bread dough. The bulbs are mild flavoured, much better for those of us who don't care for the more pungent supermarket type. I know the bulbs can be roasted and stored in oil, but don't know of a suitable oil-free way of storing them. Will have to start experimenting there!

I am jealous. Where I live in Germany you can just buy one variety of frozen kale. Maybe I should go to the farmers market more often and see if I am lucky.

Sam Svalander When I read about how much glyphosate is in oats, which is sprayed on merely for uniform drying, I went to 25-pound bags of whole organic oats cooked in my instapot. Looks like wheat berries, tastes deeelish

Canada has some good blueberries. I bought their export couple times, they're legit! really dark blue... not like the UK big ones where blue is only the skin

Just sprinkle some seaweed on top: www.limafood.com/en-gb/product/salade-du-pecheur-flakes-shaker 2 teaspoons gives you 150mcg of RDA for iodine! :)

Derek - throw a bit of turmeric and black pepper in that dressing for some color (and added benefits). I make a similar dressing with a touch of sriracha as well!

In the Netherlands (and I assume in Afrikaans, too) we still call it "boerenkool", which translates to peasants/farmers cabbage:)
