Everyone loves a good brisket but does not always want to do such a massive piece of meat every time. What alternatives can we use?
My solution was to Roast a whole Chuck Roast.
Meat: whole Beef Chuck 2.2kg
Method: Low and Slow
Cooking Temp: 110c 3hours 150c 2 hours
Duration: 5 hours Cooking 1 hour Rest
Internal Temp: 65c Wrap Meat, 95c Done
Rub Ingredients:
1 part Ground Coffee
1 part Paprika
1 part Garlic granules
1/4 part Cayenne Pepper
1/4 part Salt and Black Pepper
1/4 part Sugar (brown)
1/4 part Cumin
