Kecap Manis Recipe | Sweet Indonesian Soy Sauce For Nasi Goreng

Let's a make an Indonesian staple from scratch! Kecap manis is a sweet, fragrant, and thick soy sauce that's used in a ton of Indonesian dishes. Many people believe "kecap" was also the original inspiration for "ketchup".
Outside Asia, it's tough to find in grocery stores, but it's super easy to make your own! We use it to take our Balinese ribs, nasi goring and other rice dishes to the next level.

Ingredient:
- 3/4 cups palm sugar
- 1/4 cups soy sauce
- 1/4 cups water
- 1 knob of ginger (chopped)
- 3 cloves of garlic (crushed)
- 2 star anise
Optional:
- 1/4 tsp tapioca starch (optional but makes the sauce thicker)
- 1 tbsp molasses
The ingredients don't need to be too exact. Feel free to try additional ingredients and let us know how it went! Or if you have your own recipe, we'd love to try it!

This looks brilliant. Dad and I are making asian food this week and I think some of the recipes require Kecap so this is very helpful , thanks Aula and Dad :)

Thank you very much for this easy recipe, we live in Spain and Kecap Manis here is either nowhere to be found or extremely expensive... Now I can make my own for when I'm making Asian dishes.

In Indonesia, don't make the mistake of distinguishing Sauce and Ketchup!😅 Ketchup is black, and tastes sweet. While the sauce is red, and it tastes spicy 🌶️🍅....... 😅

I think the word kecap in kecap Manis and ketchup in tomato ketchup are actually connected. Btw, fish sauce in my language (Kapampangan) is késiap. I think it's connected as well

Fwiw. You can get the same vibe quickly with Soy, brown sugar, (1 part soy to 3 parts sugar) and bring to boil. Let rest. You’re 80% there🙄 That said, I always have garlic, ginger, (whole, dried, spice or fresh) and=now 90% there. Adding star anise helps but not HUGE Also, quite a few variations of K/M so it comes down to taste. Again, brown sugar, soy (3 to 1) and your nearly there, then you can add sambal, chili, India spices, etc just make sure you can get there first. The 5 spice is optional, again. I use it all the time but sometimes omit in my KM, sometimes I purchase KM if I see it, but no longer worry about not having it. KM can be used as a base for numerous dishes. Rendang to Nasi Goreng and everything in between from Asia to India Added perk: add some tomato and spearmint and you have a new dish. Don’t forget the egg(s) PPS. If you can. Get some tomato bouillon OR use ketchup, (yeah, the burger stuff, invented by Chinese), add ketchup, brown sugar, ginger (any), white pepper, soy, 5 Spice and you’ve got the foundation of Asian cooking with peanut oil as a perk. Then of course there is fermented soy but that’s another story. 👍😎✌️

PPS. You will use the tomato bullion in many things. Eggs, Rice, chicken, fish, beef, etc. ++ Hope this helps

You can do that, but it will thickens the sauce since it's high in caramel.

You can, I use muscovado sugar or brown sugar depending on the budget, palm/coconut sugar is too expensive for me, if molasses are cheaper in your area, consider adding more to your brown sugar.

There is literally a spice called Allspice: Allspice, also known as Jamaica pepper, myrtle pepper, pimenta, or pimento,[a] is the dried unripe berry of Pimenta dioica, a midcanopy tree native to the Greater Antilles, southern Mexico, and Central America, now cultivated in many warm parts of the world.[2] The name allspice was coined as early as 1621 by the English, who valued it as a spice that combined the flavours of cinnamon, nutmeg, and clove.[3]

It's usually founded in Indomie mie goreng ramen, that black thick and sweet substance is kecap Manis/sweet soy sauce.

Glad you like the recipe, let us know after you try it :). I'd say depends on how cold your fridge is. Use it within a week to be safe. Our fridge is super cold so we've been able to store it for a couple of weeks and it was still good to use but smell it before using and be sure to cook it through when you use it.

@@hangryhomechefs201 I made it today, it smells so good! I half the amt so that I can use it within a week. Intend to use it for indo mee goreng, pork belly satay & Thai minced pork recipe! This recipe is awesome & a keeper. Like it that it is free of coloring, preservative & msg. Thanks! Think it will goes really well with braised meat, pls come up with a recipe... Yes, there was a change in spelling over the years, but it is pronounced the same. You must be from the Netherlands. I grew up with ketjap as well.

Well, you just add a little bit in each dishes and palm sugar is better than refined white sugar I guess

Palm sugar has nutrients like potassium, zinc, and phosphorus while cane sugar does not contain any nutrients and only carbohydrates and calories. Palm sugar is considered healthier than cane sugar

@@RiskyRantung honey is also considered a healthy sweetener but it doesn't make it any different when in comes to spiking your blood sugar and in the end they are all bad the same way . a little nutrient is just a side bonus which can't be compared to the damage that high blood sugar does to make it a healthy food . you can get diabetes by consuming too much carbs and sugars no matter what kind you consume , the only thing you can do to stay healthy is moderation and limiting sugar consumption and this amount used in this recipe is way more than suggested daily amount needed for anyone at any age but we are not perfect , that's why i tried it even though i knew that it had way too much sugar :D
