If I'm using a keg, I'm using CO2 to carbonate. And if I wanted to bottle it, a beer gun would be my first choice. Much cleaner beer as a result compared to the priming sugar. Potassium Sorbate pretty much stops fermentation and allows you to back sweeten wines. The Potassium Metabisulphite prevents wild yeast from forming and causing fermentation and it's often used by professional wine makers to keep their crushed grapes from fermenting.
Hi George, feeling a bit confused my friend! I am planning to go from using plastic pressure barrels to using cornelius kegs, and every other video I have watched on the subject say that your beer must be perfectly free from sediment, due to the cornelius keg takes beer from the bottom, and adding priming sugar will create more sediment during secondary fermentation! So I'm assuming you will get a cloudy mirkey beer when you start drawing it off?
I think it's pretty common to slightly trim the bottom of the dip tube in the keg. Leave it an inch off the bottom. If you learn that you need to trim a bit more, you can. This is what I did and I couldn't be happier. Another option is the floating dip tube. That way you always draw from the top of the beer. (Both methods shown on RU-vid.)I haven't tried this yet, so maybe I could be happier... :) Cheers!
