Looks amazing. I am into my 1st week of keto and because of your recipes I am really enjoying it. I tried to do it once before but got so sick of cheese and eggs. I didn't think I would ever get to eat Banana Pudding ever again. So looking forward to trying this. One question your recipe calls for two egg yolks but your video showed what looked like 4 egg yolks. I just want to make sure I use enough eggs. I made your almond buns they turned out wonderful. Excellent! I just finishined making it RIGHT NOW!! It was not too hard at all. I was praying I would tempar correctly and not have scrambled eggs. It came out BEAUTIFULLY!! There was only one discrepancy though. In the "printed copy" you have 1 TABLESPOON as well as the video caption showing 2 different amounts of butter that go into the pudding. You "verbally" say 2 TABLESPOON Butter. By the video picture it def looked like 2 so I went for that. So your web person need to fix the video that shows I measurement and then the printed copy as well. I always have your video going and a printed copy in front of me. Other than that, I can wait to assemble and have for dessert this evening. I really enjoy making your recipes. God Bless you, your family + Team.

I made this and it turned out really good. However, the pudding was a little liquidy, so I added some xanthan gum, put the components together and left it in the refrigerator over night. It ended up setting just fine. The vanilla wafers were delicious. I did double the recipe and add 1 thinly sliced banana (it was worth the extra carbs) and divided it between 6 portions. For next time, I would like to figure out what I can do to set the pudding better, but it’s definitely a keeper.

This does not sound too hard and as I love banana pudding I will give it a try. The only question I had was when you spoke about it not working for you in the big bowl, but did in the smaller vessel why was there a box of Jello Pudding on the counter?

Looks delicious! I would call that a banana-flavored dessert like a mousse or similar though. I've been eating banana pudding my entire life and trust me when I say there is no banana extract or flavoring that can replace the taste of fresh bananas in banana pudding. My lifestyle is ketogenic, but I would rather have the few extra carbs from the bananas just once than sacrifice a beloved dessert. It's like apple pie without fresh apples. Ain't gonna work! 😜 Anyhoo, thanks for the wonderful recipes, Mayra!
