I almost cried. I am Dominican as well and have been eating keto and following some recipes that I were ok until I had these empanadas. It never occurred to me that I can do this. 🤗I love it, thanks.
RESULTS! I made a double quantity of these Empanadas on Friday for my big Sukkot - Feast of Tabernacles Celebration for 12 guests yesterday, Sunday. Completely organic, Biblically Kosher Cuisine!!! The ground almond/mozzarella pastry was a stickler to work with at first, but I mastered making the Empanadas by the time I got to the last one...ha-ha-ha! I froze them until Sunday morning on a parchment lined baking tray, covering them also with parchment paper. After taking them out of the freezer for a couple of hours, I warmed them up with my other food in the oven for about 1/2 hr. They held the shape just as when I took them from the oven! One of my guests was Mexican...she said my Empanadas were THE very best she had ever eaten. That was a stellar complement from one who knows. I made these and they were amazing. I'm the only one in my family eating Keto so I froze the ones I didn't eat right away, and they were just as good from freezer to microwaved like a hot pocket. While I was making the meat filling, I did add one teaspoon of cumin, which gives it that little extra touch of southwest flavor. Also, I think next time I make these I will add the entire Chile, as I think the flavor of just half a chili is a tad too weak. Also, the filling is slightly dry, so I think next time I'll also try adding maybe an ounce or two of cream cheese while making the filling. Beyond that it's a great recipe, and the crust could be used for a lot of different things from savory pies to maybe even Pizzas. Experiment Experiment Experiment! Thanks a bunch.
Thanks for the comment about freezing and microwaving! I was wondering about making a double batch and putting the extras in the freezer. Did you microwave them frozen, or give them thawing time? Fathead dough seems to microwave very well, unlike grain-based dough. It's even better reheated in the toaster oven!
I microwaved them frozen. I have an 1,800 watt microwave, which is a little higher wattage than most home microwaves, so it took about a minute and a half. With the average 1,100 to 1,200 watt microwave I'd say frozen they would probably take two to two and a half minutes. I'd stop at two minutes and check to see if they're warm in the center. You can always pop them back in, and no real danger since they're already cooked through. I've been craving them lately so tomorrow I'm going to make a double batch. Also, instead of the fresh chili pepper I'm going to add a can of fire roasted diced chilies (per batch). As I mentioned in my original comment, for my taste I thought the original recipe needed more of that green chili flavor, so if you're using a fresh pablano chili pepper, I'd use a whole one, but that's just my taste. Pablano's aren't really spicy, so it's easy to get away with adding more. But yes, they were great straight from the freezer to the microwave. At some point I'm going to experiment with making other things with the dough. It would work well in a lot of applications, including with sweets if you leave out the garlic powder. In fact, I bet if you added a little cinnamon and some Sukrin Gold or some Stevia (or whatever sweetener you like) the dough would be amazing to fill with a custard or whatever satisfies your sweet tooth, or even eaten on its own like chewy cookie. Darn it! Now I'm hungry!!!
Ryan thanks for the info on freezing. I was wondering how they freeze since if I'm going to do the work I'm going to make extra. Love the cream cheese idea to make the filling a little moister. I've made a freezable pizza crust with mozzarella and cooked chicken by putting both those ingredients in the food processor one at a time and then blending them flattening it out and baking and then freezing. Wouldn't think it but it comes out crispy. When I want pizza I just add toppings and bake in the toaster oven (my personal favorite over a microwave). Anyway thanks for the post.

I'm from Mexico and my late grandfather used to make empanadas like these for us, very similar to the traditional ones with wheat flour, maybe a slight variation in the seasoning? I don't remember, I was very young. I loved that he added some raisins to the ground meet stuffing. It gave the meat a tangy sweetness that went very well together. I haven't ate them since, he passed away over 30 years ago. Great video, even people that cannot cook at all will be able to follow it.
Just made these and I had to add cumin to my meat but this is the best empanada, oh my gosh! Just so delicious! Topped with mexican cream and home made green salsa! Soo good! Im intermittant fasting with keto!
I've looked at alot of keto videos and tried 3 of them. This is the best recipe for empenadas and pizza replacement. Hands down the only recipe I'll use for my keto meals. Forever in my recipe book folks.

This are coming out of the oven right now and let me tell you this "delicious" way easy to do than it looks and I got 8 big empanadas ,wish you can see them so beautiful 🤗,I used the tortilla maker and it was piece of cake to make the rounds I'm definitely making them again just with different filling. I also follow the advice to keep the grease of my meat and they're not dry at all. Thank you for this recipe . I just broke my fast because I couldn't resist but totally worth it.😋

This was the recipe that taught me how to make the fathead dough. I don't like "cooking" in microwave, and this was one stovetop recipe that was easy and worked. I'm going to make it again tomorrow. :)
This is so awesome, I’m putting it on my list of Keto recipes to try! I did have to rewind many parts though because the music had me dancing around the house and not even watching the screen! I loved it learned a new recipe and got a work out , lol.

I attempted this today. I followed the directions but my dough was just too sticky and didn’t hold together. I made a 2/3 recipe but I should have added more flour for the 2 eggs. Anyway, I ended up putting the meat mixture into a casserole dish and topping it with the dough mixture. I baked for 15 minutes and it turned out delicious!
Oh wow this is awesome! I use a lot of chickpea flour, it's one of my favorite ingredients. So now I have to try it this way! I also need to move my disabled son away from carbs now that he's in his 30's. Since he loves pizza, a "pizza pocket" lunch made this way would be just perfect!
they are in the oven now!! The filling (there was plenty left over) was so good that I couldn't stop eating it. the dough came out perfect. make sure to measure/weigh out exact. i kept the mozz/cream cheese and almond mix on SUPER low LOW so it would stay warm while building empanadas. used parchment paper pulled off perfectly. my only "oops" moment was using a little too much dough for each one. i only got six. they are bigger and have lost crimped edges due to rising. baked them a bit longer too. other than that, They look tasty an filling. i found the exact cheese she uses at Wal-Mart AND the almond flour. used half 1lb grassfed beef and 1lb fatty turkey. there was a ton of good juice leftover you can use in stock for soup.😅😅😅
Damn as a Hispanic doing keto its very hard eating Spanish food. Been searching RU-vid for low carb tortillas to make tacos and stumbled across this. I have almond flour coming in tomorrow and plan on making pizza, I could probably use the same method for a hot pocket, then some with beef.

We buy maria and Ricardo's Fiber Rich tortillas from Whole Foods. I dunno how, but they only have 3 net carbs. I have also used them as a sub for the dough for samosas.
I just made a version of these using a slight change and they were fantastic. For the meat filling I used onion, celery and bell pepper, 1/2 lb pork sausage and 1/2 lb hamburger. After cooking on stovetop I moved the filling to a crockpot to simmer for over an hour. However, a slight change I am not proud of is I used a cup of almond flour and 1/2 cup of carb quick. There was a separation in the dough at the end but overall, they were crisp and tasty meat pies!
A bunch of kickass techniques in this video. Loving the pan method for the fathead dough. Flavor choices and everything look superb. Great job. Since you obviously care about food, I'm gonna plea with you to stop cutting on plates. Nothing dulls your knife faster, and I think you care about details like those. Also, what's with all the people hating the music? I'm glad you're ignoring them.
As far as small knife on a plate cutting, you do you forget the haters. I was really enjoying the music and was moving and grooving in my chair in the dinning room. My wife told me to stop and quit embarrassing myself or through a hip out. I subscribed a look forward to trying out your recipes, keep up the good work.

I've made this recipe twice and I love it. The first time I made the dough I found it fell apart with the addition of the cream cheese. Now I just use fathead dough for the crust. I'm going to make empanadas tomorrow because I forgot to get the poblano pepper. I shared the recipe with my friend and she also made empanadas. I love how well seasoned the beef is. I add any leftover as a topping for my keto pizza.

Girl! you got a fan right here!! My friend and I have been doing keto for a while and we're like.. we miss our Spanish food. So we started making rellenos and pastelillos out of our fathead dough! hahahaha!!! Our came out messier but now i'm going to try it your way!! :D

I'm puertorican so we make our rellenos out of potato but when on Keto - we're faking it with fathead dough. But then they end up miss-shapen and really end up looking like acapurrias. LMAO

This is my second comment on this amazing recipe. First, making this dough in a warm pan has changed everything for me. I can really work with the dough now. 💖 Second, I made the dough again but this time, instead of the ground beef, I made pizza pockets. AMAZING! Looks like a great recipe and I will try it. I love Dominican food! Btw, a lot of people use their knife on a plate. For me, because I value a really sharp knife and use the sharpener nearly each time I use one...I use only a board as it certainly doesn't dull a knife like any ceramic, porcelain or marble/granite surface.
well, seeing the struggle with the knife i'd say it's probably not sharp and she probably doesn't care. i've read people get cut by dull knives way more frequently than sharp ones.

Basket of Dependables What does it matter to you if i use my own knife on a plate, Like glass or marble boards don't exist. Why some of you think your better than others? What's the difference with ceramic in a shape that your not accustomed to. What you do with yours is your business. Ya'll are too comfortable being too proper. Some of you never had to struggle for your next meal. I've seen ppl cut on clean river rocks with better knives and doing everything the "proper" way the food still comes out amazing. I cut myself with larger knives more often than with smaller ones. I'm different and your right i don't care ppl assume things who have no business in putting there nose where it doesn't belong. All the laser focused petty ppl come out like. "lol look at what she's doing, lol look at how she's struggling," instead of being productive, It's no ones business on how i put food on my table.

I made these yesterday. Great flavour and the crust is quite good. Two things I would like to share from my experience. 1) The crust is very fragile. I was impressed how the presenter handled it, but I could not repeat this. What ended up doing was leaving it on the parchment paper that I formed the patty on (the bottom of a ceramic plate worked better than my hands), put the filling on half the patty as shown and folded the patty using the paper than it was sitting on. I cut off the excess and put paper and patty on the baking sheet. 2) I would recommend making half the amount of filling suggested.
I’ve pretty much just started experimenting with cooking in the Keto style and have been very reluctant to try making this type of dough. You made it look so easy and have given me confidence that I can do it. With that said, I’m going to make his, but with some chicken filling instead of the beef. Thank you very much and I loved the whole video just the way it is.

Keto De La Crème ok, so I made these and I learned some things. As I said, I’ve never made the dough before or cooked with it. I didn’t have parchment paper so I used aluminum foil. They stuck to the foil pretty badly. I probably should have greased the foil first, maybe. I thought the cheese in the dough would be enough to keep them from sticking. I also used too much egg wash. This could have help to make them stick to the foil. I also cooked them until they started to brown like yours and I would say that was too long. It was probably ten minutes longer then the 10-14 minutes that you posted. Next time I would make sure the filling had more moisture in it. Mine are a bit dry. I had put extra coconut oil in the chicken but it wasn’t enough. I would probably put more or even add butter. It was a very good experience and I had a lot of fun trying something new. Oh no! Cheese does stick pretty bad to foil i learned that the hard way too even with wax paper, next time if you plan to try this again use parchment, i sometimes get ahead of myself and mess up when i try something new too, Cook your chicken in some broth, butter, seasoning etc, remove and shred it, add some broth back till u see the chicken is moist again but not drenched, also if you use boneless thigh/leg meat they will be more moist than chicken breast but chicken breast will still work fine, the dough recipe is time sensitive 10-14 mins additional 5 min if needed but passed that time they are likely to burn, once they cool they will harden up and are easy to pick up, initially they come out soft because the cheese is still hot, i hope your second attempt is a success. If you ever have a question, let me know. Also your welcome.

I thought for sure those eggs were gonna scramble. This is the best dough I've see thus far. It came together beautifully and I really believe it was because whole mozzarella instead of shredded with all that cellulose added was used in addition to being heated over heat as opposed to microwaving the cheeses did the trick. Great recipe, just made these for my Fiance who decided to do keto. She hates almond flour, so i substituted Ground Lupin flour instead. Ended up with something that tasted like a corn shell, she thought it was decent. Next time, I'll put some cheese inside with ground meat as well. She ate them with sour cream, cheese salsa, and buffalo chipotle ranch. will make this recipe again, Thank you.

Awesome! I love empanadas and I usually make my own. I’m on a KETO diet and now I can have them again with your recipe. I haven’t tried making them in the oven yet, I usually fry them in olive oil.

Those can be cooked in the air fryer too. And a homemade sofrito will be the bomb in this. The goya sofrito is convenient, but has msg in it, so homemade is the way to go.

Ya tu sabe!.... ;-) So I tried your technique of making the fathead dough in the large pan rather than microwaving the cheese, etc. like other videos (thank you for that life hack!) and it came out amazeballs (I know.. that phrase is so 2012, but I'm bringing it back!) when I baked it. Super puffy and bread-like. What I'd like to know is what if I wanted to fry this. How would the texture come out? Would it be anything like the bubbly, crispy pastelitos/empanada texture we get from premade frying dough discs like Goya discos, etc.? Or would the oil just soak into the dough and ruin it?
I finally found out who stole my silicone basting brush. So dang easy to make. I never would have thought of making the dough your way. This is definitely going into my Keto recipe book.
