This looks yummy! The sweetner "blends" are mostly erythritol which is a sugar alcohol. I know many, many Keto folks use them but sugar alcohols are really not the best for you. I am going to try this with Allulose which should work great and is not a sugar alcohol. Allulose is about 3/4 the sweetness of sugar so you may want to add 1/4 more for the same sweetness. Yes, definitely use what works best for you. I use mostly monk fruit sweetener these days. Erythritol tends to upset my stomach (likely the sugar alcohols) but monk fruit is my sweetener of choice. The big advantage to allulose is that it actually caramelizes, which erythritol and most other sugar alcohols do not do. (I believe maltitol is an exception to that, but maltitol causes a lot of ‘tummy rumbling’ and trots for me and other folks I know.) So I will try this with allulose.

@@eclexianyou are completely correct on that! I will have to try this with Allulose! Maltitol kills my stomach, it will send you straight to the bathroom, lol! I have to use erythritol in small doses also as it can have that effect also 😬😬

Omg I'm so early lol! Just finished a night feed with my son, it's 3:15am, he's gone back down in his cot to sleep and I'm going to stay up and watch as this is going to save my diet lol! I just said to my husband last night that I need to get rid of the peanut butter in our cupboard because I'm addicted to it, it's ruining me getting back on keto. I've got no willpower lol! I'm going to buy all these ingredients and make my own brittle to keep me on track! X

One great thing is that it’s pretty rich in taste so it doesn’t take much to satisfy your craving! I’ve been sneaking a couple pieces every night after dinner since I made it, lol! Oh, and peanut butter is my weakness too, lol. I’ve made a really good Reese cup alternative that is keto, I’ll have to share that on my channel sometime ☺️ xoxo
You could certainly give it a go! I’ve not tried it before, to be honest, I’m not sure if it would set up the same as with sugar, it may be a bit more gooey. But if you try it, let me know how it works out for you. That would be a lovely replacement. ☺️
I've made keto peanut brittle a couple of times and they are never really hard and snap when you break it and I would imagine this recipe isn't either .. right?
It snaps some, more so than with other keto recipes I’ve tried, but I’d be lying to say it’s exactly like regular peanut brittle. It’s very tasty though. Def cures the craving for peanut brittle! ☺️
Well technically most will say that peanuts are not keto because they are in the legume family but they are still a very good choice for keto/low carb and very easily available. Macros are 16 servings for what I made (I doubled mine), 4 net carbs per serving, 1 fiber, and 185 calories per serving...hope that helps some.
