Smoking spare ribs and chicken thighs on the Weber Kettle using the Slow N Sear and the Extended Cooking Grate. Pit Temp was 250 F for 3 hrs 50 min. Ribs in 3:35 and chicken in 1:30 plus time to let sauce set.

ELEGANTE GRITS RECIPE
1/2 lb Jimmy Dean Pork Sausage (mild or hot)
1 can original Ro-Tel tomato and chilies
1 (8 oz) pkg Velveeta cheese cubed
1 cup of grits
2 cups of half n half
2 cups water
Fry sausage in a sauce pan and drain
Place sausage in crock pot along with the velveeta, Ro-Tel cook on med heat
On stove top, bring water and half n half to a boil in 2 qt pot.
Add Grits and 1/4 tsp salt.
Reduce heat to low and cook for 10 minutes.
Add the grits to the crock pot with other ingredients.
Cook until cheese is melted and grits become creamy.
More water can be added to thin if too thick.
Variation: can use fried bacon or ham.
If large crowd is expected you can double the recipe.

I'm a genuine Florida Cracker and I love grits plain or otherwise. Your grits recipe will hit my table in the very near future. Since I retired six months ago I have really upped my grillin, smokin and cooking thanks to you and some other RU-vidrs. The ribs and chicken both looked fantastic. Thanks for the tips and lessons. I need one of the S&S elevated grates for my kettle. Last year I started to freeze my rib trimmings and use them in various dishes as a meat. I did a no bean chili yesterday and cut up, spiced, and browned the rib trimmings then added them to the chili. Came out delicious with a lot of leftovers that will be frozen in small portions for a quick lunch in the future. Enjoyed the video looking forward to the video on Janet's side dishes.

Hey Thomas. The elevated grate gives you a little more cooking room especially working with the dome lid. Yea, rib trimmings can be used in beans and chilis like that. Good to plan ahead on those lunch servings. Have a great week.

It can do it all, and you will have so many weber and after market accessories you can add to your BBQ tool box. I'm thrilled that you like the PIF channel and that you are enjoying watching our videos. We invest our time and effort to make a worthwhile video you can have some information, education, and a little humor to take away. You can learn a lot about your kettle and how to use it by watching lots of RU-vid videos. I never owned a kettle until 2.5 yrs ago, or any other smoker. In this area of SC, all we did with a grill was burgers, chicken, and steak and that was a fast grill. I just recently learned about the other side of backyard low and slow smoking myself. Good luck with it and just have fun. You'll cook up some good stuff. Oh, I'm chasing 70.

That is exactly what you need to do. I think you will like it. The pork sausage, rotel, sausage make it along with the half n half to make it creamy. Off the chain. The elevated grate is good when you have a little more you want to cook. Have a Goodern

Hey Phil! Wow You got a lot of gifts and a lot of friends! I need to check Skoggit out......didn't know he was a BBQ channel. That was a good first test using the elevated grate.... You can definitely see the temp difference .........it saves fuel because of the higher temps. That sauce sure did give a nice color to the ribs. 👍 It was good to see Janet back doing the taste test and I'll be looking for her grits video. Can't say I've ever had them.....maybe I now need to. Yes, make that grits recipe. You will love it. Not your mama's grits. Skoggit is a good guy. Just retired from Sheriff's Dept. He use to make lots of pit cooks but has slowed down to do other things. You may need to look back into his archives to see the offset type cooks done. He loves people, Texas BBQ, Texas Beer, Blue Steel, chasing tornadoes, and RU-vid friends. Thanks for the elevated grate. You know me, it will see a lot of action. The Rocky's Rub paired good with the Red Raider Sauce. Thanks again Ken for all your help and support. Hey Sean. Just now saw your comment. I appreciate all tie good words. Yea its been a while since Janet's cooked a side on video. Never in a million years thought she would do this and get on camera. I ise the tripod to do my videos, and she usually operates the camera at the taste test with a snicker or comment. Once she got use to that, one day wanted to cook something. It does add another dimension to the channel and viewers would rather watch her instead of looking at my old mug. LOL The extended grate comes in good when you have a little bit more you wanna cook. Everything looked great have to try making the grits they sounded good. I was amazed the ribs cooked in that amount of time. Seems like mine are 5.5 to 6 hrs. Potatoes seem like they take three hrs. Im doing shank ham tomorrow with sns I have about same amount of used coals Thats why I found this video interesting, I was thinking about layer of fresh coals and put used coals near lit coals. I think Ill follow your lead.

You must be cooking at a lower temp. I avg about 250. The food on top grate will cook hotter due to heat/smoke coming up thru the sns and rolling across the dome lid over the food kissing the food on top more. It's good to swap the ribs half way thru. All of my ribs usually get done between 3.5 to 4 hrs when I cook betw 250-270 in all my cookers. They will take longer if you cook at 225-230 ish. I noticed you switched to a Maverick, do you like that better than the smoke?

Not really, just like red. lol They are both good and well made. The smoke may be just slightly easier to program, but once you know what to do it's no bigge. I do like 4 probe wires which comes in good on larger cooks.

HEY PHIL, man that was one heck of a video my friend, I really enjoyed watching it you showed a great deal of BBQ being smoked and I loved it. Man those ribs were amazing looking and that chicken was cooked to perfection, and I loved that red looking BBQ sauce it looked outstanding on camera, I just wanted to dive in and get me a big ole bite. Tell Janet that her grits looked unbelievable looking, and all of the ingredients was right on point, I am really going to have to try them for sure, because I am a big grits eater. I wander if they make that second tear grate in 26 inch for my Weber kettle, I would love to have one of them. Man Phil you absolutely killed that cook my friend. AWESOME JOB .
