A lot of comments are here asking for alternative of yeast. I have one suggestion which i oftenly use... Take 4 or 5 tablespoons of curd and add two tablespoons of sugar and half tablespoon of salt in it. Keep it overnight or 7 to 8 hrs maximum. Now add two pinches of baking soda in this mixture. Alternative for yeast is ready. Hope this helps you all. 🙂
I tried recipe today..it turned out well.thanks for recipe...i found while baking these buns that the upper crust was a little hard when it was done..so I followed another videos tip..I brushed with butter and then covered it with a damp towel when it was hot for half hour...this made the buns soft and spongy...

I'm a pretty serious baker and this recipe didn't work for me too well. My dough rose well, but I think the oven temperature is too low because the buns dried out and the crusts were not the right texture. I baked it at 360 F for 30 mins, but my dough deflated and i got flat buns. I changed the baking time to 400 F for 20 mins and when there were about 5 mins remaining, I brushed the top of the buns with butter and baked it for the remaining time. that worked better. Still going to keep experimenting. Probably going to try using a Japanese milk bread dough as a base and adding the spices and onions etc. I also filled one with potato palya and it made a pretty good stuffed bun. I will look elsewhere to find the correct baking time and temp.

If your oven doesn't have different heating options it's best to bake at 160 degrees till brown on top. If it burns at the bottom try putting the tray higher. Ovens vary. Altitude affects the way they work too. Sometimes we get recipes right the very first time and sometimes they can drive you mad.

Radhika Prakash . I baked the buns in my convection oven, air fryer and also in a heavy bottom pot. The air fryer ones turned out the best . It took less time to bake and the browning effect was beautiful. Then when after 30 mts in the oven I put them in the air fryer for the browning . They were soft inside.
The two hours time of actually a factor of temperature. It depends on the weather. Can be 4 hours id its a cold day, pr even 8 hours on a winter morning
I feel you have added more dough later and thats the reason you got the texture. Kindly add the measurements in gms. Its easy for people who like to follow the recipe with accurate measurements
Excellent recipe...love the brush with Milk part particularly.....I replaced butter completely with two TBSP Olive oil...unfortunately cant eat so much butter (or I generally never eat butter) Also added oregano and Basil instead of chillies for the non spicy eaters at home and for the spicey ones, added mint leaves also. Comes out good enough. Also all purpose flour does a better job than King Arthurs bread flour.. Will replace next with half half whole wheat and all purpose....lol
Hi.. thanks for the recipe. It's really good. Am following recipe as mentioned exactly. But top of the buns are little hard. Inside its soft but only top is hard. Am baking in convection mode of microwave. It would be great to see your reply 😌
