Khow Suey Recipe:
For Curry Paste:
Lemongrass (stem) - 1 Inch
Coriander Leaves - 2 tbsp
Basil Leaves- 5 nos
Kaffir Lime Leaves - 2 nos
Coriander Seeds - 1 tsp
Cumin Seeds - ½ tsp
Ginger - ½ Inch
Garlic - 4 nos
Green Chilli - 2 nos
Black Peppercorns - ½ tsp
Shallots - 7 nos
For The Curry:
Oil - 2 tbsp
Dried Red Chilli - 2 nos
Curry Leaves - 1 Sprig
Turmeric Powder - 1 tsp
Coconut Milk - 400 ml
Carrot (triangle cut) - ¼ Cup
Mushroom (sliced) - ½ Cup
Zucchini (yellow) (triangle cut) - ¼ Cup
Zucchini (green) (triangle cut) - ¼ Cup
Broccoli (florets) - ½ Cup
Red Bell Pepper (triangle cut) - ½ no.
Basil - 10 nos
Brown Sugar - 1 ½ tbsp
Soya Sauce - ½ tsp
Salt - 2 tsp
Water - 1 ½ Cup
Lemon - ½ no.
Serving: (As Needed)
Noodles (boiled) - 1 pkt
Water - As Needed
Oil - As Needed
Salt - As Needed
Onion (sliced) - 1 no.
Garlic (sliced) - 2 tbsp
Roasted Peanuts - 2 tbsp
Lemon (wedges) - 3 nos
Spring Onion (finely chopped) - 2 tbsp
Red Chilli Flakes - 1 tsp
Cooking Instructions:
1. Combine all the ingredients for the green curry paste and blend in a mixer grinder to a smooth paste with ¼ cup water.
2. Boil the noodles until tender with oil and salt, as per packet instructions.
3. Coat the drained noodles with oil and set them aside.
4. Heat oil in a pan and deep fry the onions and garlic individually until golden brown, on a medium flame.
5. Coarsely crush roasted peanuts and set them aside.
6. In a pan, heat oil, add the red chilli, curry leaves and turmeric powder. Add and fry the curry paste for 10 minutes until the raw smell and flavor goes.
7. Add the vegetables and saute for 3 minutes.
8. Add water, boil until the vegetables are tender.
9. Add the salt, brown sugar and soya sauce.
10. Add the thick coconut milk and basil leaves, bring to a single boil. Finish with lemon juice.
11. Serve with noodles and toppings as desired.
