No joke. Any place that cooks with corn oil or sesame oil is hell to clean. That type of grease, it just won't budge even if you're using extremely caustic chemicals. Doesn't matter how hot your water is, how much pressure you use, or what your gallons per minute on the machine are. It'll just sit there, all smug-like until you crawl up in there with a razor blade and peel it off. Some taco joints and chinese spots, it's like you're skinning a calf.

@@swedishfish6505 Company I work for, we do take those jobs but we charge very high for it because it's going to be a recovery cleaning (6 hours or more for 2-3 techs). Post recovery we can get them down to 2-3 hours a job at about the third cleaning, if they stay on schedule. We also demand payment up front the first few services, cash or check. No payment, no cleaning; we've been stiffed far too many times. I will say this about Mexican food, at least in my area. They are, bar none, some of the cleanest kitchens we encounter. The equipment is old and worn down, but it's clean. The floors? Clean. The hood exterior? Clean. Half the time the hood *interior* is clean because they get up there every night and wipe it out. It's the roof work, duct, plenum and filters that are a nightmare. Not all Mexican places are like that where I'm at, but most of them are. They're hell to clean, but you can tell they give a damn about their business.

I like the job they did I’ve been doing this for 7 years along w grease trap removal and laundry exhaust cleaning but what about all the grease exhaust fans on the edge of the roof that you can’t flip over all the access doors that have a small door cut and can’t do much cleaning too I do this in nyc

Not bad. I would recommend using a 2ft wand with a 45 degree angle at the end in order to get the back of the blades better. I would also be very careful about using the zero tip. I noticed you hit the fire suppression link. You want to avoid spraying that directly. It could set the system off.

So you are telling me it needs cleaned all the way up and not just the vents? How long can you let it slide before problems occur? I'm asking because at my place of employment they are all younger than me 51 and know nothing of proper maintaining the building they own. I am tasked with cleaning the hood vents and if I dont say something they get forgotten over all the other stuff it takes to operate a kitchen. Its been 4 yrs.going on 5 my bosses owned their building. So really it's up to them to know and they do not. I am their steward dish guy drains garbage and ny other area including fryers grease and hood vents. Please tell me it's still cleanable .lol

Pablo is right, if you use the right chemicals you can use a regular garden hose with reel connected to a hot water outlet with a variable trigger nozzle as long as the water is hot

My recommendation is to funnel the bottom of the hood so all the grease doesn’t goes into there floor drains ..take it outside far away an empty in a safe area .🎉

DestroyAllorNothing liquid caustic- high alkalinity, low foam.. specifically designed to break down grease. Especially on stainless. Careful getting on aluminum, it will turn it black and burn any aluminum.

Didn't clean in behind the vents, nor did you show the grease traps below the vents being cleaned out. The stainless steel behind the vents was still pretty caked on with grease. Noticed as they were putting the vents back in. I have to clean the vents at my restaurant, sadly can't spray it down like you guys did, that would make it so much easier.

I use to work with a good exhaust cleaning company. Never again will I work that job. Way to dirty, most bosses cheat you out of hours, and the people that work at restaurant business are the worst. You never wanna work in a restaurant. It's like those people aren't connected to reality and have massive egos.. always telling you how to do your job but has a dirty ass kitchen and dirty pots laying around. I'll stick to tree work.

rtd Ozi... well what we use to use was oven cleaner and we would pour that chemical into the foamer for the power washer... and the pump sprayer I believe has sodium hydroxide mix with water in it

There's all different types of degreaser that commercial traders use to clean systems like these sadly you cannot buy them as they are corrosive and dangerous to use we use potassium hydroxide base degreaser that has.amazing grease cutting abilities but at a cost of burning our skin when we co.e I to contact with it

The way you washed that fan a little cringy the top half of the fan where the motor housing is. you have to be very careful if water gets in side that motor it is as good as fucked .. and on the outside as well usually there is an electrical box attached to the side of the fan Bowl

This is how they're cleaned. I've been doing the same thing these folks have been doing, with heavier equipment and far more potent chemicals than shown here (very high PSI, high volume, 250F heat or higher) for over six years. I have had water infiltrate and ruin two fan motors in all that time. It's not the fault of the cleaner if the fan motor gets ruined. That means that the system is not water tight. That's on the manufacturer, or the installer, or the owner for lack of proper maintenance. Those fan motors are also quite robust. I have seen motors running with no covers on them, exposed to the elements. I have seen motor housings with gigantic holes punched in the tops and sides of them. What you just saw in this video was actually a fairly ideal fan. Most do not look like that. Most look like a hobo has been up there beating on the thing with a baseball bat because he thinks moon monkeys are inside of it or something. No joke. Most commercial fans look like they're about to fly apart under their own power.

You can't clean a hood system correctly without an extension wand and injecting chemical through the pressure washer. Luckily for them this hood was fairly clean to begin with

Injecting chemicals through the washer for hood cleaning is not a bright idea. You can damage unknown parts in the hood. Your best bet is a foam cannon or a foaming pump up sprayer.

@@CravenM1980 I've used foam and though it works to a degree it's costly and doesn't get into every part of the hood. Heat along with injecting chemicals through the pressure washer is the safest and most effective why to clean an exhaust system. If you use the correct chemicals there is no damage to the hood system. I'd say foaming is good for the final wash to get possible left over grease that may have splattered due to cleaning out the grease track. Asian grease must be penetrated before the foam is able to get under the grease or it will simply stay on top of the grease.

I have to say, the techniques used in this videos are not the safest or most effective ways of cleaning. The used of just a hand sprayer without a wand for pressure washing does not reach the far away stuff and doesn't get the hard to see spots in the fan and is very dangerous to the user. We see this a lot in our area and the ones who use this way of cleaning don't get called back.
