Jay Lopez of Cleannex LLC explains how a quarter inch of grease is deep cleaned from a restaurant kitchen exhaust system. He starts at the top of the system, which is the fan, and works his way down to the duct, grease filters, and oven hood. He scrapes and power washes thick layers of grease away from the metal. If a kitchen exhaust system is not cleaned according to national guidelines, a fire can ignite and burn down the building. It's recommended that these are cleaned every 30 days to six months, depending on the cuisine and frequency of cooking.

Fun Fact: The reason for sodium hydroxide and/or potassium hydroxide working as a degreaser is because these bases saponify fats to soaps. They literally turn grease to soap. Soap is much easier to rinse than grease also, fun fact!

You do 2 or 3 restaurants per night? On your own? Canopy duct and fan? You must be some grafter mate cos I done this for 4 years, we done it in teams of 2, all different places, and we done 1 job per night, maybe 2 if the second job wasn't that big. Never mind 3 on my own.

My dad used to do this as a 3rd job. He used to go at 12 midnight working until dawn, since it's the only time the restaurants are empty plus he already has a day job. I respect and love my dad for all the work he does for the family.

I am astounded at the sheer amount of people that really don't understand that restaurant staff *don't clean the exhaust system*. We just don't have the tools for it! We clean the actual kitchen, not the exhaust system. It may differ from place to place, but in all of the restaurants within my county, we have health inspectors come twice a year. And in during those visits, they check the label on the outside of our exhaust system that the cleaning company updates after every time they do their cleaning. Its *mandatory* that the label is constantly updated. Also! Cleaning it can get expensive, especially for smaller restaurants! Sure, there's those that slack off, but generally? *This isn't something we can control.* What do you want us to do? Stop cooking that much food?

Amen I was thinking the same thing. I'm a chickfila kitchen manager and we clean the hood vents and the entire outside of the hood system every night. But we aren't able to clean the actual vent all the way up to the roof. We have it cleaned quarterly. Plus last thing we would want is a employee accidentally setting off the ansul fire suppression system. Yeah definitely not the restaurants fault unless they aren't having the cleaning done or paying for unexperianced cleanners.

Thank you for bringing this job to light. My dad had a company that did this for 17 years. I grew up in the company, learning how to do this type of hard work. Before he sold it, he had a really hard time finding people willing to work with him, primarily because of how difficult it is. My dad was/is super human. I have the utmost respect for him, especially now that I’m an adult. Taught me a work ethic that’s hard for those that haven’t experienced this type of hustle to imagine. Thanks, Dad! Props to all the hood and grease filter cleaners out there. Y’all help make the world turn.

I did this for 2 years, started my career In the fire industry here. This is the hardest work I’ve ever done. 10pm-7am wrapping hoods, spraying chemical, spraying water, on rooftops in the dead winter snow. Respect to all the hood cleaners out there.

@@salemcrow5078 it’s exhausting. You’re out from 9 pm- 7 am sometimes later if you have a client that needs done at 7. By the end of the night you’re covered in grease, soaking wet and freezing in the winter. You have to be able to climb up ladders, carry pressure hoses, roll around cans full of water. Climb around kitchen equipment. Sometimes put heat blankets on top of 600° pizza ovens and work on top of those because those can never cool down, sometimes your plastic will rip and water will flood everywhere and you have to figure out if you want to flood the kitchen and then clean it or stop and somehow McGuiver a patch on wet greasy plastic.

My stepdad did this for a job, night shift cleaning grease ducts, spraying it with caustic soda as you go. He would have wounds from time to time 'oh a bit of acid dripped on my arm and started dissolving me' What a friggin man.

I'm tired of having to clean above the cupboards at home but after watching these guys, I really have it easy. I recently started using a goo remover to cut through the grease, and then a multi purpose cleaner and that saved heaps of time but these guys... I won't complain about having to clean the kitchen again.

For those complaining restaurant staff don't do enough, this is the exhaust, not the kitchen itself, I can't imagine restaurant staff will have the skills or equipment required to do this. This sounds like it is something outsourced to a specialty cleaning contractor on a regular basis to comply with a city's health and fire safety codes which I imagine get inspected by the local council a couple times a year. But it got me thinking about the exhaust pipes in houses, it is a legitimate fire hazard and I don't think I've ever had someone come into clean ours. Should get someone in!

Yeah restaurant staff can't do this although some restaurants do attempt to have it done this way but the fire marshal needs certified cleaner to have it done regularly and submit documentation

Exhaust from dryer lint is also very dangerous. You might want o also check that out. People don’t realize how dangerous they are. Especially in apartment buildings. I’m houses too. The lint builds up, and is highly flammable. Then you can’t get it put out burning inside.

I don't think houses have exhaust pipes, at least not like here. Maybe mobile homes. Houses usually have vents. Your vents collect dust. That's all the stuff you're breathing in. You should get it cleaned. Exhaust is usually for industrial places. Ahh, forgot about chimneys. Also forgot about the kitchen vent. This is stuff one usually doesn't think about.

I cleaned hoods for a numerous years and while in trade school HVAC. I wanted truck experience. Not for the feint heartened. Long hours in the overnight, harsh chem, unreliable people, unreliable jobs, unreliable equipment. I tried to go back a couple months later and couldn’t do it. I have a huge amount of respect for anyone who does this work. You deserve more for the work you provide.

If God really blessed them and the hard work they would get paid more, I cleaned a Outback Steak house every night for couple years. I got like 4 days off a year, no sick or vacation. I missed one day from being sick with food poisoning, all I got was grief for not cleaning the store.

Lol funniest part is its been like this for YEEEEEAAARS!!!! I worked foood for 8 years around 12 years ago and you'd be surprised what comes out of there. You think this is gross imagine what comes out of the fryers when they don't change the grease and the smells. Then wait till they pull it out from the wall and what's underneath it too. The filters drop into a slide that goes into a little drip pan. The grease collects dust and other crap makes it all gummy and hard to get off. You have no idea what is in or how ur food is handled but ya eat it anyways. Food for thought! 🥸🤷‍♀️

I worked in an indoor grill which used charcoal, and we cleaned those filters with power washer and soap every 3-4 days. And yes, the people cooking had to clean all that stuff. made us wanna be work cleaner since we have to clean up the mess anyway.

@@FelixMomentvm it's a cross between rancid oil and raw sewage, with rotten raw chicken thrown in for good measure, that's why it's good to keep up with maintenance of the kitchen vent system ! Also one main reason health departments shut a restaurant down!

There are certain chemical environments that even a filter-type respirator mask is not good enough for -- you need a forced air mask with the air being sourced from somewhere outside of the area you are working. One advantage of the force air type masks is that they don't have to be all that air-tight...

I did this type of work out of high school, and can tell you if you saw the vent hoods and cooking equipment in the kitchen of some of your favorite restaurants, you might never eat there again.

Having worked in a restaurant years ago, this is hard work!, everything has to be spotless! We'd have a company come in once a month to clean the fans and ductwork, but we would clean the filters and mesh screens twice a week !, paying attention to the grease containers on each section of gutters! Used a special grease de solving cleaner, followed by a hot water rinse !

I mean a smooth stainless steel surface is great for cleaning. Compare that what people have near their oven at home: often wallpaper, that you should not even get wet for cleaning!

I've worked for a well known restaurant chain for 9 yrs now as a night shift cleaner and I've honestly never seen hoods and filters that bad. We clean them every night after closing and it only takes ten minutes with a cloth if you keep on top of it. We only need to get a company in every 6 months for the ducts and fans.

Filters will look clean and still be packed full of grease behind and between the baffles. I’d recommend getting a second pair and soaking/drying one pair while you are using the other. You can tell this by weighing them before and after soaking them. Huge difference it will make.

@@joeydewitt4639 ours are steel reusable filters they get taken off and steeped in degreaser once or twice a week depending on how busy we've been. The oil filters for the fryers though get replaced every night with a new set.

Depends what you cook with, restaurants that need to clean a lot most likely use very bad oils like canola or sunflower. Cooking with butter doesnt cause these messes

Did this exact job for about a year. We used caustic soda as degreaser. Covered everything with plastic sheething and the works, same as the video. Wasn't a bad job, biggest downside was third shift. And always smelling like a kitchen.

Many insurers now make it a requirement to have commercial kitchen exhaust systems cleaned out periodically, or your cover is void, because the grease build up is a big fire hazard. Also some of these, maybe older, exhaust systems are not really designed to be taken apart and cleaned. So the work might also involve removing rivets, or cutting holes into the sheet metal at various places for access and then patching it up again.

Unfortunately it's up to the franchisee's. I've worked places where the owner was a complete idiot, but he had experienced regional management running all his stores. They had a group of maintenance guys that went to all their stores and cleaned the filters by hand in a sink every 3~5 days during McDonald's day time business hours. Other places I've worked I don't even know if they had anyone cleaning anything--ever.

We cleaned those hood filters every we week. I remember we threw them into the industrial steam dishwasher. I'm not sure if someone had to scrape grease out of it before though.

razor blades are crazy good at scraping flat surfaces, because their sharpness means that they don't leave part of the stuff behind by sliding over it, but rather take off pretty much 100% on the first pass.

Me & my family owned a cleaning company for 11 years. I’ve worked lots of times in cleaning restaurants. Their exhaust hoods/filters, oven, kitchen appliances, etc. I literally cannot understand how restaurant owners can’t get their kitchen clean more than a year. The look and smell of that grease is really disgusting.

I feel like if I owned a restaurant, I would just pay for professional cleaning like this every 6 months, because I've seen too many episodes of Hell's Kitchen to know that workers don't always clean it and when they do they don't always do the best job

This is the exhaust, not the kitchen itself, I can't imagine restaurant staff will have the skills or equipment required to do this. This sounds like it is something outsourced to a specialty cleaning contractor on a regular basis to comply with a city's health and fire safety codes which I imagine get inspected by the local council a couple times a year.

I did that for 6 years. Don’t miss it at all. Not to mention being underpaid. Hardest part was in the winter. We had to pull out the hoses quick and start ( I’d not the hoses will freeze, even thought we had a hot water pressure washer).

If a system gets that dirty it means the owner never had it cleaned. I clean fast food places that are 24hrs & they never are this bad.

This area is not normally cleaned by the restaurant employees, it’s nothing to do with the kitchen hygiene standards or a dirty kitchen, the extraction system is usually cleaned out using specialised contractors such as these guys every 6 months. For health and safety reasons employers always get third party companies to do it

In tn it’s required to be professionally cleaned at a minimum of every 6 mths. Only a few restaurants do it more than that. Steak ‘n Shake is every month

In canada you have to get your hoods cleaned depending on what food you cook. My parents own a chinese restaurant and the requirement is 6 months minimum but 3 months is recommended
