It's not that we don't know her true self enough, it's that she's resisting against her kill-on-sight programming by coming up with plans to kill someone later rather than right now. Since she's an Assaultron she's allowed to resist against her aging and damaged combat inhibitor with battle tactics for the sake of improved performance in head-on combat as well as infiltration. Making her self aware in more ways than just emotions when she knows how to manipulate her own core programming so as not to go feral like all her robot-kin have already.
