Fwiw, I've watched 2 videos in the last week where martial arts RU-vidrs tried to do that 2-on-1 defense against a knife and received what would have been fatal stabs. In the RU-vidr challenge all 6 guys where judged to have died from their wounds and in the other video the FMA just switched hands with the knife. D'oh!
For most American police departments, the standard response to a knife attack is to draw their gun and shoot the person. You see this in the news all the time. They have a 21 foot rule that they don't allow someone with a knife to get closer than 21 feet to the officer.
