Sanjeev sir it's not Kolkata's famous biryani. Am pure vegetarian but our brothers and uncles are hardcore non vegetarian. I see them many times to prepare the recipe. It's my humble request to you please don't destroy our food. You are a good chef it doesn't mean you can cook anything. Please don't name something famous which is your creativity. 🙏

I have lost respect for Sanjeev Kapoor, he makes food very casually, he cooks everything like maggi, traditional recipes like Calcutta Biryani needs regorius preparation and cannot be cooked with "bachelor inside kitchen" approach. Don't call this hotch potch Calcutta Biryani. Basically Sanjeev Kapoor is a talentless and careless cook who has made his career by extensive PR, TV shows and over advertisements. If you want to learn authentic recipes, then never follow Kapoor.

You see it is not necessary that you marinate the chicken with yoghurt but adding a bit of yoghurt into the gravy or yakhni gives it a richness or shine or moists the rice.

This is not actually kolkata biryani . He just put there some potato and egg but the assemble of biryani had not shown in proper way and some spices and specially mitha atar was missing there
