A simple recipe for Korean Pork Curry:
Ingredients:
1/2 kg pork
2 medium carrots
1/2 kg potato
1 medium onion
1 pouch Korean Curry powder
salt
Cooked rice, for serving
Instructions:
In a large pot or deep skillet, heat vegetable oil over medium heat.
Add the pork pieces to the pot and brown them on all sides.
Cook the pork till browned, add sliced onions, carrots and potatoes and continue to cook until they are softened.
Let it cook for 20- 25 minutes or until the pork is cooked through and the vegetables are tender.
Stir in the curry powder.
Cover the pot and let it simmer for about 10 minutes, stir occasionally
Season the curry with salt and pepper to taste. Adjust the spiciness by adding more curry paste if desired.
Serve the Korean Pork Curry over cooked rice.
