Good question, what I did here isn't really optimal but I just found this with trial and error, I tried moving my manouvre node until when I was breaking Mun orbit I was travelling in roughly the same direction as Kerbin. However I learned after this that you should get on the side of the Mun that is retrograde to the Mun's orbit around Kerbin and then accelerate directly away from the Mun.
