Harvest the kumquats that grew in my neighbor's field for a seasonal jam. I made a bagel and tasted the delicious kumquat cream cheese bagel.
Bagel ingredients
Powerful powder 200g
Salt 3g
Honey 20g
Yeast 2g
Water 120 cc
Knead the ingredients together for about 15 minutes, 30 minutes for primary fermentation.
Roll it into a caterpillar shape and bench time 10 minutes.
Formed into bagels, secondary fermentation for 20 minutes.
Add honey to hot water and boil for 30 seconds on each side.
Bake in oven at 200 ° C for 17 minutes.
(Our oven is a cheap rotary oven that only sets the temperature up to 200 ° C, so a typical oven takes about 13 minutes at 210 ° C.)
If you make it with honey instead of sugar, it becomes a moist bagel. Since the hardness changes considerably depending on the amount of water depending on the flour, please adjust the water at about 100cc to 120cc.
