Old Fashioned Ricotta Cake
Ingredients:
*For the Pie Crust:*
- 125 g (about 1/2 cup) soft butter
- 125 g (about 1/2 cup) granulated sugar
- 3 egg yolks
- Zest of half a lemon
- 1 tsp vanilla essence
- 300 g (about 2 1/2 cups) all-purpose flour
- 1 tsp baking powder
*For the Filling:*
- 500 g (about 2 cups) ricotta cheese
- 75 g (about 1/3 cup) granulated sugar
- 3 egg whites
- Zest of half a lemon
- 50 g (about 1/4 cup) candied orange peels
Instructions:
1. Preheat your oven to 180°C (350°F).
2. *Prepare the Pie Crust:*
- In a mixing bowl, cream together the soft butter and granulated sugar until light and fluffy.
- Add the egg yolks one at a time, beating well after each addition.
- Mix in the lemon zest and vanilla essence.
- Gradually add the flour and baking powder, mixing until well combined.
- The batter should be smooth and cohesive.
3. *Prepare the Filling:*
- In a separate bowl, combine the ricotta cheese, granulated sugar, and lemon zest. Mix well.
- Beat the egg whites until stiff peaks form, and then gently fold them into the ricotta mixture.
- Add the candied orange peels and mix until evenly distributed.
4. *Assemble the Pie:*
- Grease and flour a pie pan
- Spread half of the cake batter evenly in the pan.
- Spoon the ricotta filling over the pie crust.
- Top with the remaining pie crust and crimp the edges
5. *Bake:*
- Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
6. *Serve:*
- Dust the cooled cake with powdered sugar if desired.
