Those things are awesome. I did a hog on that years ago for super bowl and it was a huge fail lol. They’re still cool though,I just didn’t know what the hell I was doing. Looking forward to see a cook on it👍
Tip: When you flip the hog to crisp the skin, make sure you remove all the ash from the tray. You want it hotter than during the first 3 hours of cooking. It is the difference between super crispy skin and just okay crispy skin. Looking forward to your experiments.
The Bob Ross shirt was cool...it brought back memories of my father who watched him and painted as well. Great job on the assembly video...love to see I’m not alone in my assembly mistakes. Congratulations on getting into the Caja China. We've been enjoying ours for years and it never disappoints! From whole hogs to turkeys and several large loins at a time, everything comes out great. Almost impossible to not have great food every time. After the whole hog, be prepared for some time spent cleaning the unit up.

The foil will most likely leak (I tried it once) and not be worth the effort. There is not much room under the hog for pans either, and you will have more drippings than a sheet pan will catch. After all the fine pork you all will be enjoying, some clean up time will be worth it.

Oh man, so cool to see you get one of these!! We were at a pig roast last summer and they used this. Now the only thing I'll say is, and I don't know if they were following the pig roasting instructions or not, BUT the pig was not as tender as it could've been IMO. It tasted great, but definitely needed some more time to render. Just something to be aware of, especially if they were following the instructions. 🤷♂️ I'm really looking forward to seeing you use this, and I'm sure you'll nail it!

4 hours crispy skin pig is an amazing thing! I think you can even add a smoker thing to it by drilling a hole. I've been wanting to do this for ages. Not just pigs, but turkeys and pork shoulders too. I season my shoulders with Puerto Rican and Cuban style mojos, sometimes using paprika, brown sugar or brown sugar and malta, which the Caja China founder does.

I actually laughed aloud when you said "This flimsy piece of crap is the drip tray". There's an honest review for ya. A+. We may still be surprised by the cooking results, though.
Thank you for clearing somethings up as the ash pan looks like the drip pan. I ordered the 50lb roaster and the drilled holes are pretty bad and some of the parts look like they were abused while being placed into the shipping box....I hope it does the job.
