Only a blind test could serve a comparison. If I spend 18k on a machine, never my brain would tell me another device can make a coffee as good. Your comparison is just a selling point.

Fair point, this video was meant to be more playful than anything. Yes, we sell both units, and I personally like them both too. I'm not motivated by how much machines cost, but rather how they make me feel, overall performance, build quality and usability.

Well you'd need to account for the fact that more money in has diminishing returns, so with that in mind you could probably give a reasonable guess. 18x the price does not mean 18 times as good espresso, but maybe 1.5x as good?

As an ex pro barista (now only a home barista, for reasons), worked many years with synesso hydra MVP, i can safe say that all these expensive machines are for consistency at high number of extractions, they don't offer greater coffee cause they cost too much, they offer an always stable extraction

You hit the point. The Fair can pull a shot 100% as well as the Leva X if you can pull one shot at time.

I will keep my flair, I don't drink milk drinks and it and my DF83 and KinoClassic 47 fit the necessary requirements for my espresso shots. That La Marzocco is a BEAST!!!

The Leva seems more designed for commercial settings, especially as they have two or three group versions. The downside to me is with those high end spring levers is they can only do one profile, yes a declining profile beats the pants of a flat 9 bar, but on a light roast, lower pressures are better. If you could swap out a 9 bar spring for a 6 bar for one of the groups (like how many cafes do it on their pump machines) for lighter single origins, it could be the ultimate commercial machine. As for the Flair 58, I use it every day. 6 bar declining shots work best for my coffees, my wife prefers a medium dark so she gets a full 9 bar declining profile.

Leva x boiler temp is at 94.5c and you're saying the shot will extract at 91c. Why is that?

What a load of BS. I have the 58 and a GS3,. The 58 is JUST AS GOOD as the GS3. It’s just a workflow issue. Coffee is no different. don’t listen to this propaganda folks..
