LAAL MAANS
Preparation time: 45 minutes
Cooking time: 45-60 minutes
Serves: 02
Ingredients
For Marination
1 kg mutton, curry cuts, मटन
2 tbsp ginger garlic paste (70% garlic + 30% ginger), अदरक लहसुन का पेस्ट
For Gravy
¼ cups ghee, घी
2-3 cloves, लौंग
10 black peppercorns, काली मिर्च
2 small cardamom, छोटी इलायची
1 big cardamom, बड़ी इलायची
250 gms onion, sliced, प्याज
marinated mutton
Salt to taste, नमक स्वादअनुसार
20 mathania chilli paste (use soaked chillies), मथानिया मिर्च पेस्ट
200 gms curd, beaten, दही
1.5 tbsp coriander powder
1/2 tsp red chili powder
2 tbsp mustard oil
Process
● In a mixing bowl, add mutton, ginger garlic paste and marinate well as keep it aside for 1 hour.
● In a large saucepan, heat ghee and splutter peppercorns, green cardamom, black cardamom and saute well.
● Add onion and saute till translucent, add the marinated mutton and saute for 4-5 minutes.
● Add salt to taste, mathania chilli paste and saute well for 4-5 minutes to remove chillie’s rawness. Cover and let it cook for 30 minutes.
● Add in the red chili powder, coriander powder, and mustard oil in the curd and mix ,cook for until mutton becomes tender.
● Serve with roti.

This is one of the best recipes for Lal maas on youtube. The most important part of making Lal maas is that the mutton needs to cook to almost 50% just with the mathania chillies. The caramalization of the mathania chilly along with mutton is what brings about the authentic flavour of Lal maas!! And that's what he did. He added curd along with other masale only after the mutton was cooked up to 50% just with chillies. Many other recipes on RU-vid tell to marinate mutton with red chilly paste, dahi, masale, etc. That dish is also tasty but thats more of normal mutton curry and does not bring that original flavour of laal maas!!

First of all...its always a pleasure watching Chef Ranveer Brar in the kitchen cooking unique dishes of the different states and countries. Second you are the best Chef I have seen who describes the food and its ingredients which makes it more authentic and unique in itself. Lal Mass was one such dish I have seen being made a lot of Chef but yours is the best of them all. Thank You so much and will try it someday. Quick update for you Ranveer, Mathania does not grow chillies anymore due to lack of water. I was in that area and went there to find out. You do get other red chillies which are also good. Locally grown Dhaniya and Jeera are of very good quality.

I've made it watching your recipe 4 times and have got loads of appreciations. Tried with mathania much as well as kashmiri (didn't have mathania at that time, had to order via amazon). Definitely the former is waaaaay better.

In winters my family make mutton ka achar . In which haldi and ghee is used with mutton and we eat it whole winters..😋😋😋 so tasty.. whenever we have to eat mutton we just boil water and add mutton ka achar to it it's ready in 5 mins in cooker

While, I agree that there are very less restaurant totally dedicated to Bengali cuisine, but it's more due to the fact that Bengalis are less likely to be entrepreneurs and run their own restaurant businesses, however some of the top notch chefs in India are Bengali, and Bengali sweets are popular. throughout..

Oh my my!! We made it at home and it was stupendofantabuloslyfantastic finger lickin, Gorgeous!! One of the best mutton I ever had. As an addition from our side We just smoked it as well by charcoal and the result was out of the world. Many thanks Ranveer!! 😀🙏
