Aaron's got a great lamb recipe for you lucky people. Easy to make and amazingly tasty. Minced lamb seasoned with spices, herbs and sweet apricots then griddled over a high heat, laid on a crunchy salad and cooled down with fresh yoghurt and toasted pistachios. All in a soft tortilla wrap. You've got to give this a go!

Guys stop complaining about the spices, that it's too hot. There is literally hundreds of videos on foodtube without chilies.. some of us like spicy food, and did you hear what he said? "You can add but you can't take away" make it as spicy as YOU want it.

In Turkey (called köfte) we make it even more spicy. The only thing I haven't seen before is apricot but I think I'm gonna try it, looks interesting! Btw cayennepeber isn't actually that hot.

Very flavoursome! I like how you fold the wrap and covered it in foil and then took the foil off halfway, very good technique.

I was just in France, and you would not believe how many Kabob restaurants there were! It was one of the best things I've ever eaten! Can't wait to create the same experience right in my kitchen!

Why anyone would (for example) mix ingredients with their hands, without first removing their rings, is totally beyond me! Your jewellery may be beautiful, but the microscopic germs lurking on and under its surfaces could put you out of action for days!

I know what you mean. I was literally cringing about the food safety side of it. I work in food also and any type of jewelry is a big 'NO!' Other than that the recipe was great :)

it does not concern me as much as when chefs with long hair do not pull their hair back and let them hang in front of their faces while cooking

Berserkism Probably for a very good reason. Also consider what kind of dirt and sweat build up might be underneath those rings. I'd prefer not to have someones sweat in my food. But, I guess I'm just weird like that.

'Kofta' literally means 'cardigan' in Swedish, so you could say that the lamb kebab is wrapped in a fluffy tortilla cardigan ^^

Gorgeous. I specially like the pistachio, pomegranate, and cumin parts, remind me of Persian food. Very popular ingredients in my country though :)

It's not actually Kofta. Kofta is a specific recipe who's spices can be slightly different from one version to the next, but apricot doesn't belong in it at all. Just because it has mince in it doesn't make it Kofta just like any creamy pasta isn't carbonara. That's probably the main issue. Another is his use of the word "literally" when there is no figurative way to express what he's seeing or saying.

What we do alot in Morocco is have extra cumin to sprinkle on too at the end !! So good ! You can even dip your meat in some of it !!

For the proper kebap you must make your minced meat with big cleaver and that way helps to keep meat juicy.A salad with wallnuts rocket pomegranate molasses cucumber tomato and olive oil, goes with it very well

Absolutely loved the recipe. Looks delicious and all those flavors and textures make sense together. Can't wait to try it. The only think I would change is to glaze with honey after I take it off the griddle pan to rest because otherwise cleaning that sticky honey off the pan is going to be a nightmare(unless its a non-stick pan).

pour some water on while it's still hot. It will instantly boil and the charred bits come off easily. Give it a little scrap around with a wooden spoon.

The REAPER Blog - Pouring water on a hot pan is usually not very good for the life of the pan. I've ruined a couple of good pans by doing that. I guess it depends on the kind of pan though. Definitely a big NO for cast iron but might be ok with stainless steel or non-stick pans.

rohan kamath respectfully disagree with you. Any good pan will be able to handle it. I do it every time I use my cast iron pan and griddle and I've done it on my clad steel pans. Hot water from the kettle is ideal.
