Rob where are you getting beef cheeks and lamb ribs from in Vancouver? Would love to know. Also any recomendations for the best place to get a quality brisket? Haven't had the best results with Costco, but it might just be my abilties.

Brother I’m with you on that, I’d do both cheeks and Lamb ribs if that was the choice, can’t get enough of either, if you ever find them go for the rear leg lamb shank and cook it low n slow like the beef Thor’s hammer, it’s a game changer

The Mad Scientist takes on the meat that tanks Chud's channel every time he cooks it. And I'm here for it. Love smoked lamb. I do like an herb-heavy run with it. Because that plus the smoke takes the game bite off the Lamb. Whereas salt and pepper, you're going to accentuate that. And even if you personally like that note in Lamb, most don't want to be punched in the face by it. So the herbs and smoke allow the bite to sneak in at the end, so the person eating says, "Oh, this *is* lamb!" Rather than saying, "Yep. Tastes like lamb."

I was first introduced to lamb ribs when I moved to Kansas City. We have a local BBQ chain called Jack Stack that serves them. Since then I've periodically smoked them at home, and they really stand out with rosemary in the rub. They're incredibly easy to make, and the only thing you have to ensure is that you trim off all the top fat.

Jeremy I love lamb have cooked it hole to barbecue. The one big thing with lamb is how it is slaughtered. I raise my own and butcher it. The one big thing is if who ever does the slaughtering gets any lanolin from the wool on the meat you get a lamb taste. There is a very precise why to skin and butcher that I won't go into but that's why so many people don't like lamb. Also alot of the time people think they are eating lamb when they actually are eating mutten big difference. It's my favorite meal if done right. Great video.

Those look soooooo good! When I was growing up as a kid in the 1960’s lamb (and veal) were quite inexpensive so we had it often. Every once in a while my mom would get lamb ribs as they were practically given away (it was not as though we were poor, just budget-minded). Lamb back then also a had stronger flavor because it was all domestic, not the milder “spring” lamb that often comes from South America or Australia as it does now. I wish lamb was that cheap now!

Here in downunder we smoke lamb ribs a fair bit as it's hard to source good pork ribs as you get in the US. It's so tender and juicy and takes on a sweet flavour profile really well. Often we smoke with just kosher salt and then finish with a drizzle of smoked honey. Delicious.

Lamb ribs were so cheap here in Australia but have doubled in price in the last year and are now the same price as pork ribs- gone from $10 a kilo to $20 a kilo. I am doing a pork shoulder cook and I am in California so I have access to almond wood which is awesome on the smoker. I had the idea to add some pellets to the fire just to see what would happen which was a gamble because the cook is for the people coming over to see a fight on paperview. I saw that the pellets didn’t catch right away but when they did the smoke came out pretty thick. I was wondering if you would do a video on what would be the best way to integrate pellets in a stick burner and when it would make a difference or if there is even a difference.

I myself will smoke lamb ribs at about 275 for anywhere between 1 and a half and 4 hours depending on if i forgot about it or not. I use mix of salt, pepper and fresh cut rosemary from my garden to season (if you dont have rosemary, plant some, super easy to grow). Once ive decided its pretty smokey and cooked, ill spread my coals out (i have a weber smokey mountain) and put the coal cage and a grill on top and sit the ribs fat side down and just let it lightly catch fire. Too much fire and you damage the delicate bone handles, want just enough fire to really caramelise the fat. Service sliced and lightly salted. Anyone that adds sauce isnt Australian and can be shown the door.

Here in Aus we grew up eating lamb as it was the 'cheap' meat, sadly things have changed and most lamb cuts are much more $ than beef or pork. Not a fan of lamb ribs - they tend to be thicker, more expensive and much fattier than pork but I absolutely love a big leg on the smoker (cook like a pulled pork) with a simple SPG rub. I'll have to try out your idea and use a sweeter rub next time.

I hear goat ribs are really great and goat meat is similar to lamb without the musty lamb taste. If you're taking suggestions, how about smoking rabbit? I have some land but not enough for raising goats or lambs (or maybe just not enough fence) but I can raise rabbits or chickens. I don't want to be the guy with a rooster waking up all the neighbors so rabbits seem to be the best home grown protein source for me. I just need to make sure i know how to make fatty sauces so i don't get rabbit starvation.
