I just made lasagna in a 9 x 9 baking pan. It’s not as deep as the loaf pan but it still was delicious. I will have to try the loaf pan next time.

This is a great size for me. It would probably last 4-6 meals. Thank you, Catherine. For me, I’d eliminate the peppers and onions, add onion powder and rosemary. I’d also. Add garlic and parsley to the cheese mixture. I’d use RAO’S for sure.

Even tho our two boys are in their twenties and one has moved out on his own they still expect to come home and find plenty of left over food in our fridge ….. I don’t know if we will ever be able to ever cook for two …… but we love that ! 😀

This is a great idea Catherine!😍 So often there aren't enough people to eat a giant pan of lasagna, much less the recipe that makes two giant pans.😋 This is a wonderful way to have lasagna with maybe another serving the next day!😚 Thanks for sharing another great recipe!🥰

One thing I love about cooking my own lasagna noodles. I have use the oven already ones in the past but when you cook them down yourself you can cut them down to size and used additional pieces just within the lasagna itself love that this is a cook for two because I just bought 100 foil pans on Amazon that are singleserve size and I plan on making a lot of singleserve meals for my kids and myself but one person wants one night maybe the other person doesn’t if I do the make ahead meals, then anybody can pull out whatever they want and just pop it in the oven 1:49

mmm mmm good - i think making 3 or 4 of these size servings ahead/before hand, in those throw away baking tins you can get a the dollar store, and freezing them until you want to eat one would be absolutely perfect and convenient - thanks :)

I don't mean to be tacky by posting again, but OMG! Catherine thank you for this for the bottom of my heart! While it was cooking the house smelled amazing. My son and I love this recipe. I chose not to use green peppers. Instead I used mushrooms. This is my first lasagna and I did it!

Would definitely sub out egg, ricotta, chopped parsley, and shaved parm in my cheese mixture. Instead of lasagna noodles I use slices of eggplant and zucchini salted and dried prior to layering.

Also just me & my Hubby. I use a 9 x 9 pan and do a meatless lasagna ( usually make mine with spinach ). Husband likes it with meat, like yours, which I do every other time. Your lasagna looks delicious!!
