Made this. My husband laughed and said it was just hamburger soup with zucchini in it. Then he ate it and loved it and said it actually tasted like lasagna! Definitely making this again.
if you cook the zucchini down by caramelizing well with the beef then the zuc will be a lot less bitter tasting for those sensitive to the green zucc flavor. its so good when cooked down to sort of a melting texture in tomato soups

Looks good! But ooooh I get soo bothered when someone puts a dirty spoon in a container of butter or cheese.. if you gonna use it again for another recipe I don't want that in my cheese or butter 😂
I thought the same thing. It will cross contaminate the ricotta and it will go bad in no time but if you’re not going to use it in another recipe, then you’re good, just go ahead and throw it out.

Just made this last night!! It was delicious….. my husband loved it. I added some cooked macaroni to it because he didn’t want it Low Carb, lol. But it was definitely a success, he had 2 bowls.

Love love LOVE that you’re actually seasoning your food! So many low carb diet people barely even salt let alone season their food, and I love too that you’re doing this with really comforting dishes that the whole family will eat, because not all of us have the time or energy to make multiple meals at the end of the day!
I Love that you added Zucchini instead of PASTA to make it Low Carb. ..only thing is NO Celery for me and added finely chopped grated Carrot instead into this. I added Fresh BASIL at end.. but, great recipe and idea to encourage low Carb. ❤❤
This looks delicious. I'd recommend you add the garlic later in the sautee. The length of time that the celery takes to soften is way too long for the garlic. You may not have recognized it yet, but the overcooked garlic is going to add a lot of bitter to your soup. Congratulations on your weight loss, and thank you for sharing your secrets to success!
Thank you for sharing this lasagne soup. Yummy . Parmesan cheese and ricotta cheese and ground beef or Italian sausage. Tomato paste garlic zucchini and salt pepper and celery onions Italian seasons low sugar marinate. Great for rainy days on a summer monsoon season . Thanks for sharing your recipe yummy !

I tried this with a few tweaks. I used beef broth instead and I 86'd the Parmesan cheese on top and added a 1/2 of water. I have to say I enjoyed it and would make again! Thank you!
