I love all your recipes, my favorite being your zucchini orzotto that I make on repeat! This one doesn't have to be a one-pot meal, but could you make more recipes using couscous? I started buying it again as a different carb option, but always unsure what to do with it!
I'm gonna suggest a Ukrainian favourite: Lazy cabbage rolls. Easiest thing to cook. Pound or two of ground beef. Onion. Long grain rice. Saurkraut. Can of tomato soup. Cook one cup of rice. In a frying pan, brown hamburger and onion together. Put into a small roaster. Heat saurkraut in the frying pan used for the hamburger. Add to the roaster along with the rice. Mix in the tomato paste or tomato soup. Heat through in the oven 300 to 350 degrees for 20 min or so. Quick and easy as falling off the kitchen stool. Kids seem to like this and its a favourite at the office potlucks.

Do a series on meals that freeze well for later in the week. I love to cook a bit pot of food and freeze most of it so that I d can unfreeze later in the week when I may not want to cook. Some of the great meals I cook unfreeze to mush though. Any suggestions?
0:00 LAURA VITALE PREPARA CACIO E PEPE ONE-POT Ingredientes: 2 o 3 calabacines medianos, cortados en rodajas finas 2 cucharadas de mantequilla 2 cucharadas de aceite de oliva 1 cebolla amarilla pequeña, cortada en rodajas finas 3 dientes de ajo, picados o enteros Sal al gusto 4.5 tazas de caldo de pollo 1 cucharada de condimento multiusos Agua 12 oz de pasta de elección de corte mediano 1/2 taza de Pecorino 1/4 taza de parmesano Un montón de pimienta negra recién rallada Preparación: 1:00 1) En un horno holandés, agregue la mantequilla y el aceite, derrita a fuego medio, agregue los calabacines, la cebolla y el ajo, sazone con un poco de sal y saltee por 10 minutos o hasta que los calabacines prácticamente comiencen a derretirse y desarrollen algo de color (puede que tenga necesidad de aumentar la temperatura). 3:16 2) Agregue el caldo, el condimento (condimento Italiano, hojuela de chile, pimentón o paprika, ajo en polvo, cebolla en polvo) y un poco de sal (solo si el condimento no tiene sal), añadir agua y llevar a ebullición. Agregar la pasta, cocinar unos 8 minutos, luego agregar los quesos y mucha pimienta negra, retirar del fuego, tapar y déjelo reposar tapado durante 10 minutos. 3) ¡Sirva con un poco más de queso y pimienta y disfrute!
Cara Laura, io adesso non capisco una cosa. Qui abbiamo in effetti una pasta con le zucchine, non una “cacio e pepe”. Il fatto di aggiungere del formaggio e del pepe, noi italiani, come tu bene sai, sono cose che mettiamo un po’ su tanti piatti di pasta, ma non è che poi il piatto lo chiamiamo “cacio e pepe”. Mi sembra un po’ strana sta cosa.
One pot wonders are life saving in this day and age. Having numerous people in a house, all with different schedules, makes having something readily available key to everyone getting a good nutritious meal.
Can you make some gluten and dairy free recipes? I have a daughter who can’t have dairy or gluten and it’s very difficult for me to find different things to feed her.
