Layered Vegetable Samosa

You will need:
4 cups cubed mixed Veggies ( peas, carrots, potatoes)
1/2 cup finely chopped Green peppers
1/4 cup Oil
1 cup finely chopped Onions
1.1/2 tablespoon Ginger paste
1.1/2 tablespoon Garlic paste
Green chilli paste to taste
2 tablespoons Raisins
1/2 teaspoon Turmeric powder
1.1/2 teaspoon Cumin powder
1.1/2 teaspoon Coriander powder
1 teaspoon Garam masala
1 teaspoon Paprika
1 tablespoon ground Cashew nuts
1/2 teaspoon Chaat masala
Salt to taste
1 tablespoon Lemon juice
Handful of chopped fresh Coriander
For the Dough:
4 cups plain flour
1 teaspoon Ajwain/ carom seeds
1 teaspoon Salt
1/2 cup oil
1 cup plus 2 tablespoons approximately room temperature water
