Lazy Daisy Cake 

This week we have another much baked family favorite for you all. This old fashioned "Lazy Daisy Cake" It's so forgiving! Just whisk the ingredients for the hot milk sponge, bake and top with the struesel. No frosting or icing, the struesel takes care of that! What you'll need...
For the hot milk sponge
1) 1 cup all-purpose flour +
2) 1 tsp baking powder
3) 1 cup fine granulated sugar
4) 2 large eggs at room temperature
5) ½ cup milk
6) 1 tbsp salted butter
7) 1 tsp vanilla extract
What you do is ..
1) Put together the milk, butter and vanilla. Warm and keep aside.
2) Whisk the eggs and sugar well. Add a little flour and hot milk alternately till it's just mixed.
Bake at 180⁰c / 350⁰f for approx 20 mins. Get it out, mix your struesel.
Here's what you'll need for the streusel topping..
1) ½ cup shredded coconut
2) ½ cup chopped cashew nuts
3) 5 tbsp sugar
4) 2 tbsp milk
5) 1 tbsp butter
As your cake is getting done, put the ingredients for the topping together. Top the cake and bake for a further 10 mins. Turn to grill mode for the last 3 mins. Your oven has a "broil" mode? Perfect! Broil till lightly browned.
Bake at 180°C / 350°F for a further 10 mins.
