Lance, i use a breville dual boiler and when pouring my latte art i face a common problem with my espresso 'cracking' i don't know the correct term. But i think it could be a thin crema? It makes my designs almost squiggle. should i be changing my pressure? what do i need to change.

Hi Lance! I really appreciate all your videos! They’ve really helped me figure things out. I was wondering what you’d think of starting a “react” series where you take a look at submissions about steaming milk/latte art and help determine what they did wrong. I think you’re so good at latte art that even when you try to show the mistakes things turn out better than most of mine… so seeing real users making mistakes might help the rest of us. Thanks!

What size pitcher / cup do you use? Is there an ideal size ratio to have enough space to tilt the pitcher close to the cup? Thank you!
@joconnell
@joconnell 2 года назад
The bigger the pitcher, the more you can tilt it without the milk slipping out but a bigger pitcher means the height of the milk won’t be as deep for when you’re foaming it. Some people will foam in one pitcher and transfer the milk to another to pour. Lance is normally using a 450ml / 15oz slow pour supply handleless round spout pitcher, not sure on the cup size! Usually, you figure out what size drink you want, how much milk is going into that and then get a pitcher roughly double that size. I make a 240ml drink with 36ml espresso and 200ml milk so I use a 15 oz / 450ml pitcher too.
@sneakson4104
@sneakson4104 2 года назад
@@joconnell Thanks for the tip! Been using a 15oz pitcher, 8oz cup, 30ml espresso, but started with 230ml milk. Will try practicing steaming with 200ml and hopefully will be able to get close to the espresso with the pitcher. Thanks!

@slow_clumsy

You can pour in any cup just like how you don't need a jibbijub to pour some nice latte art, certain cups help with pouring latte art. Your issue is a milk steaming issue
@joconnell
@joconnell 2 года назад
Size just depends on how big a drink you want in the end, smaller cups end up with less thick surfaces because you get less milk in the base so you need to pour more quickly to get more thick milk out so it floats!
@joconnell

Also, say you like an 8oz drink, if you swap to a 12 oz drink, you’ll need some to adjust. They’re all different with one not easier than the other
