You can buy WS2812 LEDs arranged in a circle for example at AliExpress.

Were all these animations captured and played back or they are generated procedurally in realtime?

With xLights you create a Sequence with a series of animations. When this Sequence is played back the animations are submitted to the LED-Controller in realtime. Inside the LED-Controller no animations are stored.
