RECIPE:
50g butter, at room temperature
1 cup (220g) caster sugar
grated rind of 1 lemon, plus
100ml lemon juice
3 eggs, separated
⅓ cup (50g) plain flour
1 cup (250ml) milk
pure icing sugar, to dust
cream, to serve (optional)
Preheat oven to 180 or 160 fan forced (celcius)
Cream softened butter and sugar with rind
Add lemon juice, egg yolks, plain flour and milk, mixing thoroughly after each ingredient is added.
Whip egg whites to stuff peaks and gently fold into mixture.
Cook for 45 minutes.
