I really don't think it's a good idea to add the lemon juice to hot oil. That just denatures the citric acid content and imparts bitterness. The traditional, and ideal way to do it would be to add the rice first, let it cool and then add the lemon juice. Et voila, perfect lemon rice.
Thermal shock is applicable here, just like science is applicable in cooking and pastry. Don't be so arrogant in putting people down with your googled knowledge. Goodbye.
adamp108 ***** Courtesy of Wikipedia, in which I learned that not only does a Maillard reaction occur at much higher temperatures than caramelization, but that adamp108 was wrong: "Caramelization is an entirely different process from Maillard browning, though the results of the two processes are sometimes similar to the naked eye (and tastebuds). Caramelization may sometimes cause browning in the same foods in which the Maillard reaction occurs, but the two processes are distinct. They both are promoted by heating, but the Maillard reaction involves amino acids, as discussed above, whereas caramelization is simply the pyrolysis of certain sugars. The following things are a result of the Maillard browning reaction: Caramel made from milk and sugar, especially in candies: Milk is high in protein (amino acids), and browning of food involving this complex ingredient would most likely include Maillard reactions."
Thanks so much Vah Chef! I did not know how to cook before I got married, never was interested in cooking as well....but thanks to your videos, I feel confident cooking now.....inviting my friends tomorrow, preparing south Indian cuisine....all from your recipes :)

Im sorry chef but the yellow ones' are the lemon and green ones' are the lime right? Just to make sure with you. And the video is clear and nice chef. Thank you :) .
pls dont add lime juice with the stove burning. put off the stove & then add lime juice next time. Do add freshly grated coconut into the rice & mix with well & then serve next time.
Wonderful. But don't put spoon in your mouth or take some rice on a plate or bowl. It's not customary to put the spoon on pan as you're already put it in your mouth. So bad to see again and again.
