These lemon sugar cookies taste like sunshine in a cookie. A light, chewy lemon sugar cookie topped with amazing lemon buttercream!!

Ingredients:
4 Tbsp or 1/4 cup butter, salted and softened.
1/4 cup granulated sugar
1 tsp lemon zest or zest of one lemon
1 tsp lemon juice
2 Tbsp beaten egg
1/2 cup plus 1 Tbsp all purpose flour
1/4 tsp baking soda
pinch of salt
1/4 tsp cream of tartar
Directions:
In a bowl, cream together butter, sugar, lemon zest, lemon juice and egg. Beat with a hand mixer until fluffy.
Add in dry ingredients including flour, baking soda, salt and cream of tartar.
Mix just until dry ingredients are incorporated, don't over mix.
Scoop dough onto a parchment lined baking sheet. Will make 4-5 cookies
Bake at 350 degrees F for 8-10 minutes. Don't let them get brown.
Frosting Ingredients:
2 Tbsp butter, salted and softened
1/2 cup - 3/4 cup powdered sugar
1 Tbsp lemon juice or enough to make a good spreading consistency
After baking remove cookies from oven and let sit for a few minutes then move to a cooling rack to cool completely before frosting.
