Truffles:
450g white chocolate
180 ml heavy cream
55g unsalted butter
1 tsp lemon extract
Coating:
350g white chocolate
1 ½ tbsp vegetable oil
METHOD
Place pieces of white chocolate in a bowl, add heavy cream, butter, lemon extract and microwave until melted, mix well.
Shape into balls, place on a tray and freeze.
Place pieces of white chocolate in a bowl, add oil and microwave until melted, mix well.
Dip each ball in the chocolate and oil mixture. Add lemon zest to each ball, then refrigerate.
